    www.pizzapacket.com

I think I have sourced it through Cash & Carry or Cash & Carry URM. $10.39 for a 200ct case… I’ll just have to pick some up on our next supply run to the big city and test it out 🙂

    Where to get condiment packets?

Thanks Bodegahwy. Sysco only delivers to our area through third party distributors (not directly), who add on 10-20% to the cost, making them our most expensive option. I don’t think US Foods would even deliver to our tiny mountain town if no one else here buys from them. I’ll have to ask around...

    Where to get condiment packets?

Doh, that what I get for not telling the wife I was posting this, LOL!

    Where to get condiment packets?

I started off with the regular food vendor, but they kept changing manufacturers and raising their prices to the point it was ridiculous. Then I found a place in NY (Pizza Packet), but its a 50/50 split on whether they will even answer the phone to take an order (and even though their website...

Pricing, Costs, changes (looks like the recent thread on this topic vanished)

That might have been the thread I created, since I do not see that thread anymore. In the thread I posted a link to an article about the record high dairy prices...

    Caputo “00” price

Wow, that Caputo must be some kind of designer flour? Even the Restaurant Depot brand seems expensive. We use Pendleton Flour Mills Mondako flour. This has worked very well for us and we get a lot of compliments on our crusts. We buy it for $19.50/50lb bag.

    Supremo Italiano products

I quit buying entirely from Sysco distributors because they constantly keep changing their vendors for a given product. Apparently Sysco would be ok with going to a car dealer, signing a contract to buy a Cadillac and having a Ford Pinto delivered.

    Freezers

Ditto on checking the NSF/commercial requirement for your area… they are not allowed in my area. Also, I suggest stay far away from Arctic Air brand. I’ve nothing but problems with mine.

    White sauce

We tried some of the pre-made alfredo sauces and they are just packed with sodium and other preservatives (and expensive too, about $.30 cents an ounce 2 years ago). We ended up making our own, for about $.15 cents an ounce, today’s price. We do cool it off for refrigeration at night, but it...

    Sysco Cheese

How big are the cubes of diced cheese? I would imagine pretty small? 1/4"? 1/2"?

    Sysco Cheese

When you buy it pre-diced, how big are the chunks? What are the benefits of using diced over shredded? We’ve always just bought block and shredded it on the Hobart, but I’m always open to new ideas.

Need help estimating sales in a captive market

I’m not here to argue either. You stated some facts, and I raised a question. Thanks 🙂

Need help estimating sales in a captive market

Ok, some questions, based on what you have posted. Is it even worth it to open a franchise place (and pay their fee), given the low volume? Given that most pizza places do the vast majority of business for dinner, in your market, do you might be over estimating your monthly sales a bit? In our...

Gastown pizza shop owner suspended for selling pies after 2 a.m.

Well, I believe knowing your market is a big part of buying or starting any business. If this guy did his due diligence, he would have known about this issue and possibly decided to not open there. Since we can only assume he did know (it seems there is some history to this), then I don’t really...

Threat of illegal changing time clocks

It is going to vary by state according to that state’s labor laws. In Washington state, it is illegal to alter an employees time card unless both the employee and manager sign the time card. It is viewed as a legal document that can be presented in labor court as binding evidence. So just be...
