    Replacement Dough Boxes

Anything new on standard 18" X 26" X 3" boxes? We need to buy quite a few replacements and wondered if you might have suggestions for good boxes at good prices. Thanks,

    Tom Lehmann has Passed Away

From the owner of Johnny Rad’s Pizzeria Tavern in Baltimore; “RIP ‘Dough Doctor’ Tom Lehmann. I’m sure I have a story similar to many other unapologetic pizza nerds, from the days of the PMQ Think Tank forums well over 10 years ago, baking pizzas at home. On the forums and off, this dude would...

The New PMQ Think Thank - How To Re-Join

Is there a way to start a new thread? This new format doesn’t appear to have been thought out very well.

Thinking of buying a second location... asking price seems off though!

Yeah, 25% net profit sounds too big. Does he own the building and then doesn’t charge the business any rent? Are there employees being paid “under the table” (out of his $104K). His personal tax return will likely tell you what you need to know.

    New Pizza Cutter Idea

Good luck with your project. But you can’t fool us … we know that your various cutting products will need to be tested, and you are the perfect three people to do that testing. Of course all those pizzas will then need to be either thrown out, given to charity or eaten, and you are not wasteful...

    French Fry Portions

The answer from “Pizza Of The Month” to buy bulk spuds and sell “House-Cut” fries will lower your food cost and provide both a better finished product and a better image. Go to Youtube to get the lowdown on double-frying them and cool ways to top them off … new products could be priced higher...

    Thinking of opening a shop...Tell me why I shouldn't!

Although I haven’t given much thought to this, My first impression is like yours … at $1K per month it would be hard to fail. A few thoughts to get started: Make sure that the deal is in writing (you should probably use a lawyer, but there is no reason to spend a lot for something that is this...

    Dough Rounder Purchasing

I’m not really experienced in buying through Ebay, but; 1) Ebay has vendor ratings that can give you confidence that you’re dealing with a reputable seller, and 2) if you pay with PayPal they will provide you with protection from scams or merchandise that wasn’t as promised …...

    Peppers on a pizza

How about either buying roasted peppers (much of the natural moisture has been cooked out of them) or sauteing them before topping the pie.

    Impact of high cogs

It’s all about what’s being sold. 45% COGS at a gas station would produce huge profits, for example.

    Possible franchise opportunity

Can you tell us a little about your market in North Texas … the demographics; population, income levels, age distribution, major employers, etc. Also, is getting a full liquor license a big deal there? And finally, when you say “franchise”, are you financially in a position to fund a complete...

    Starting 90th

Nice! I guess you will be a little late getting up tomorrow morning … what with all of the frivolity, spirits, marching bands, dancing girls, etc. Just jokin. Happy Birthday!

Signature Pizza AKA: "Owner/Shop Specialty Pie"

You are guarateed to be the most talked about joint in that neighborhood of the mid-west. And if your pies taste half as good as they sound (except for the kimchi … disgusting stuff imho), the public will beat a path to your door, almost without regard for price. Sounds like you’ve been part of...

    Pizzamaster Ovens

If you say “slightly burned”, you must deduct $2 from the price, but if you say “charred to perfection” you can add $2.50

Existing Pizzeria acquiring another long time local Pizzeria

Ahhhhh, I thought it was a done deal. If it’s not yet been consumated, I encourage you to explain to him the negatives. If, of course, he needs backup equipment, and the purchase price refects little “value added” to the used equipment value, then maybe there’s some sense in moving forward.
