    Need a 30qt or 40qt mixer . . . OKAY 60 qt

Is EuroDib a brand anyone is familiar with? See a used B60F single phase really clean 60qt that I could get under $5000 delivered from a used equip shop. Price is good, but a good price on a flimsy mixer is lame.

    Need a 30qt or 40qt mixer . . . OKAY 60 qt

In the most absurd of circumstances, I find myself in need of a commercial mixer. I intend to make 25lb flour bag batches of dough. 50lb may be too big, as I don’t need a 60qt . . . unless someone convinces me otherwise. Looking at a 14" and 12" pie . . . . maybe a 10". Possibly 150 pies in...

    Competition returning!

Depending on your community, FLAG DAY June 14 has potential for a big celebration . . . Making a big noise is a one off with maybe a 3 week life on any bump you get. Make sure you have a consistent and regular message going out to the market so you stay “top of mind”. Vary the way you get your...

    Mushrooms

peaceandpizza: Well spoken in the vast variety of mushrooms out there . . . there is even wide variation among the same varietal grown in different locations and climate/soil combinations. . . . buttons being the one most are familiar with in North America. We in the US get REALLY short-changed...

    Mushrooms

Complete wild guess would be that they are a different sub-species. Crimini and white button are really closely related . . . and there are others out there evidently similar, but cultivation industry preferred the white button decades ago. The Canadian supplier you are using probably uses a...

    Soft pretzel dough recipe

I don’t have direct evidence/experience with beer in bread to offer; I’m sorry. Tom Lehmann will see this eventually and drop some knowledge on us 🙂 What little experience I have with breads so far, I would say that you can substitute flat beer for equal part water - to a point. Example, take...

    Soft pretzel dough recipe

Most everyone says to use your regular pizza dough recipe. I’ve not tried it, but it’s got to be the way most people do it. Maybe a little lower hydration? Then the soda/water dip then bake. (lye and soda both increase the pH, which is the key to that whole thing) I got this one from this...

    Cost of Wings

Penelope: whole will likely include the tips that are complete waste unless you have the uncommon customer who wants them fried . . . our they are awesome for making fresh stock. Whole wings should probably yield closer to 90% or more useable product. So, 36 to 38 lbs. of 6-10 flats&drums. It...

    Request for bread recipes/formulas

Let’s say I am being recruited. No chance I can start-up or buy my own place right now. Flexible operation in a small market. Could be a multiple opportunity sort of thing. I’d be in the kitchen and less of an ownership responsibility. And I have a friend who would absolutely LOVE to start a...

    Request for bread recipes/formulas

I cannot thank both of you enough! The recipe is just waht was looking for . . . and the link is a wealth of stuff to pour over and learn. I’m finding there is so much (isn’t there always?) to learn about bread baking craft. It’s been satisfying and fun digging into alpha amalayse and all that.

    Tomato/Pizza sauce king?

Their business and service has been exemplary for the vast majority of those who use them. Some have reported bad experiences, and those are worth hearing. Often times, it is local brokers/distributors who drop the ball. If you contacct them directly with your issue, they will often correct it...

    need some creative input

Rockstar, Consider asking about deals on unsold inventory. Around here they have crazy deals on buying time in unsold inventory spots. All the ones in the pool rotate through any unsold time slots based on whatever criteria you pay for . . . frequency, specific channels, specific time slots, and...

    Your thoughts...once again...

Freddy_Krugerrand: The core of the issues you asked about . . . . perception can work against shops because of association. I do agree that done well, and not as the only marketing, it could work in the right location.

Indy, do you have a menu link with a photo? I’m still to thick to visualize what you do with this . . . . don’t want to steal it, just make my own variation if it looks good to me for what we do. Link?

    Your thoughts...once again...

The dancing sign people on the side of the road are very often associated with ‘less prestigeous’ businesses. Sometimes with low end, parasitic businesses. For a perceived middle class business to have a sign dancer on the roadside could be perceived by some as similar to the “we buy gold”...
