    Restaurant Depot

    I am very lucky to live 5 minutes from RD. I pick up produce once or twice a week there. They are also nicely priced for many paper goods like napkins, straws, styro cups/plates etc., plastic containers for salads and the like.

    dough

    Once we had flour that came with brown specks in it. It turned out it just wasn’t milled down as much as usual. Made the dough look pretty funky but it tasted fine. Didn’t affect the rise of the dough though.

    Has anyone else seen a sharp increase in shredded mozza prices? My cheese went up to $1.95/lb. this past week from about $1.83 last week from about $1.70 a month ago. Something strange is going on here, methinks.

    Stanislaus has a pasta sauce called “Al Dente” which is pretty good for pasta dishes. You could add a Burke crumble to make it meat sauce. I might try this myself!

    Reverse direction on Lincoln 1302 conveyor

    I use a Lincoln 1301 oven that wasn’t keeping up with our lunch rush, so we needed to add one. I picked up a used 1302 which stacks nicely on the 1301. The only problem I have is the conveyor goes the wrong way. Imagine my surprise! Does anyone know how to reverse the conveyor direction?

    Disposable Discs

    I think most distributers carry the bakable trays. I’ve gotten them from Roma and Reinhart but I know others carry them. Restaurant Depot here in the twin cities does not carry them though.

    Sommerset Dough Press

    I don’t have an answer to your post but I can relate. The switch on our Sommerset sheeter gave out too. As it was stuck in the “on” position, we just plugged it into a power strip with a switch. I really should get it fixed though. Where did you pick up the switch and how much did it set you back?

    Meat sauce

    Stanislaus has al Dente! pasta sauce you could use as a starter. It is quite good. Also Land o Lakes makes a premium alfredo pasta sauce that is also very good. You could add beef, chicken or sausage to those and have a delicious sauce I would think.
