    yes we use our regular dough. try it at your shop. It’s best to let the dough rest in the pan for an hour or so. that will help it puff back up after going through the ringer. we are working on a Sicilian pizza that will use a different dough…its amazing!

    That is a Great idea! we do 1 teaspoon in small glassine bag, size 201, and a staple it has worked for years.

    Who uses steak?

    Steak was never that big for me. had it for about 4.5 years, we did panini, sandwiches, and a dinner. never offer it in a pizza though, we used prime NY vein steaks. They were good but it never really sold. discontinued them a while back.

    L-cysteine/PZ-44 so just out of curiosity I googled this stuff…anyone bother to look up how it’s made??? L-cysteine the active ingredient in PZ-44 it synthesized out of human hair!!! it’s people…IT’S PEOPLE!!! o_O and people wonder why everyone has cancer.

    we used Fishbowl for about a year. We didn’t feel the return was worth the $400 a month. Anyone using smart pizza marketing? I recently stumbled across his podcast and really enjoy it. Curious if anyone is utilizing his services.

    yeah i won’t do it. I have never enjoyed a hot avocado. I just feel they don’t bring much to the party once they are heated up. Even on a burger; I’d rather get a extra buck for a fried egg on top of a burger.
