am i the only one who can not find help these days??

We ran an ad on indeed.com and got a whole bunch of applications. It’s well worth a $20 ad to see if it brings you the same results it did for us.

Uber Eats, Grub Hub, Postmates, Amazon

This would scare the crap out of me as someone with a long time business built around delivery. If I went all in with Uber Eats who has been in town for about a year, what happens when they decide to leave? There’s certainly not a long enough track record with any 3rd party delivery companies in...

Uber Eats, Grub Hub, Postmates, Amazon

I don’t use any of these services but my sales have skyrocketed since third party deliver became widespread in town. I guess they get more people used to getting delivery to home so the pie that we’re all fighting for a piece of has gotten bigger and bigger.

    Lloyd Pans made to order?

While I can’t comment on how they inventory their products, I will say their quick disks are a phenomenal product when compared to a typical screen. I can remember having to constantly reseason screens on a weekly basis and still have pizzas stick on a nearly daily basis. I can’t recall more...

    Mozzarella Price Question

Many of us contract to pay a certain price over the bock market price. I pay 21 cents over the block market price. Some pay less, some pay more as volume and distance from manufacturing facility are big factors in pricing. In general terms, the price of cheese leads the price of milk, not the...

    Mozzarella Price Question

Ask your supplier to tie your prices into the block market prices. They pay based upon the block market, so why shouldn’t you. Keep track of it through cheesereporter.com

    Letting an employee go

Change locks, remove his/her alarm code. If they have remote access to POS or security cameras, change passwords. Explain to staff why the manager was terminated in general terms, no specifics and don’t try to make the manager look terrible in the staffs eyes. If manager is upset over being...

Why, after 19 years with Microworks Prism I would do it all over again!

I’m on version 8 but not using driver app and tracking. I feel like I have spent more time communicating with tech support since making the switch a year ago than I did in years prior.

Lightly oiling dough balls in manufacturing

There was a company at Pizza Expo that produces robotics that they were showcasing handling dough. I’m sure it would be quite expensive but they would be the company I would start with in looking for something like you need. Maybe someone on this board remembers the company’s name?

    Speedline- pay @ the door

Here’s my take on this: 3-4 months payback seems a bit ambitious at least when I plug my numbers in and consider the 1/2% savings. I’d be looking at 7-8 months, assuming we didn’t break or lose a single machine. Does keying in a card actually cost 1/2%? Given a choice of time savings on the...

New idea for how to top a pizza.

If a regular pepperoni pizza had 45 slices of pepperoni, I would certainly expect more than 9 slices of pepperoni on the meat lovers pizza, even if you’re charging me the same price. I hate feeling like I got ripped off but that’s how I would likely feel if I got a 20% portion of each topping on...

Quiet Conveyor? XLT, MM, or Edge

I replaced a 2007 Model XLT in 2008 with Edge ovens and the Edge was significantly quieter. Things may have changed over the last 10 years so I can’t say if this is still true. BTW, at the Pizza Expo, Edge had a “cool wall” feature on the face of the ovens that could be powder coated any color...

    new mixer advice

pizzapiratespp, what size LBC spiral did you buy, the 80 or 120? How long have you had it? Is it being used at your busy store(not sure if you make dough at centralized location or at each store)? I’ve seen these at Pizza Expo the last two years but the people exhibiting them are not so friendly...

    Spiral Mixer Size Question

While at Pizza Expo one of the things I was looking for was a new spiral mixer that I could mix a minimum of 100 lbs of flour. I’ve included a link to the one I think I will buy at the bottom. I’ll be buying the 120kg model as I would be at the max capacity if I bought the 80kg and I’m a little...

Papa John's or Domino's pizza dought and process

Seems like much too much water. That would be the amount of water I would add to 10 lbs or flour. Salt seems high as well.

    Recipe Decoding?

It’s dough, what do you expect to find in the pack? A typical dough will have flour, water, yeast, maybe some salt, sugar(or honey, molasses, agave nectar, ect), pz44, parmesan? Will the pack tell you what protein content their flour has? What hydration ratio they use? Warm or cold water...
