    Neapolitan pizza base

I too think we’re talking about the VPN designation…but yield to those much wiser than I. Besides…would one care if it’s an ITALIAN regulation? That’s for those in Italy to be bothered with yes?

    Sundays?

Nope. I’m also an Ordained minister so Sunday is just another work day at “my other job”. Even if life was different I don’t think I’d be open on a Sunday. Family has to enter into the picture sometime, as well as that well-deserved day of R-E-S-T.

    Gonnella Bread, Chicago. IL

The one thing we miss being in a small rural community is access to a good bread. We get by, and the customers are happy with what we use, but I know there is SO much better out there it bugs me. There simply has to be a way to stay with your current Gonnella delivery. They’re good, not the...

    Iceberg Lettuce?

Nah Paul…it says right on the label it’s “Organic” ! It has to be good right?

    anybody going to napics show?

We were planning on it, had a room at the Hyatt and all…but had to sadly cancel yesterday. I loved NAPICS when we went, and would encourage anyone, no matter what stage of their experience they’re in to go and bug Jeff and Tom for the weekend. They have a fantastic kitchen set up and I don’t...

    Iceberg Lettuce?

We use iceberg heads and mix in a Spring mix we pick up from SAMS. I’ve tried EVERY suppliers version of a nice Spring mix, but I can’t get it to hold for the entire week no matter how I handle it. The stuff from SAMS for some reason I can keep in my walk-in for 8-10 days before the slightest...

what to do about a non responsive classified purchase

I’d take the lack of response as a sign it’s not been an issue normally, not that folks are ignoring you. I doubt there’s much that can be done on the forum though.

    Subways doing Pizza

Maybe it’s regional, or up to each franchise but ours the ones in our area aren’t selling them, or at least not advertising them anymore. Frankly the only worse pizza out there was when McDonald’s tried them several years back.

    Super bowl coming again....

I have been tempted to open, but since Sunday is “my” day…don’t. I’m thinking we’ll maybe do a Mother’s Day brunch this year though, but remember, we’re full menu.

And it's no surprise of course....

I’m really trying to laugh with it…but following what was a fantastic December making a really nice 2011, and what is starting out to be a much much stronger January than I had expected, the only natural expectation was to come in this morning to find the pizza table had shucked it’s motor over...

    Advertising... Different approach???

We do something along this line from time to time, maybe it’s time to again. We have a pretty decent Facebook following so we’ll pop up an offer with a limited number available, such as “for the first 5 orders only”. It works. And…who’s to say when we hit our 5th order.

    Is your pizza the best?

Absolutely hands down. Now…what did you expect folks to say? Seriously though, we have one local chain that is past it’s glory days, and one Hut…oh yeah and a Casey’s Gas station if you count that as pizza.

    Uniforms?

Yes of course…as you self-edited. We wanted our employees to know that we do view them as a very special part of our lives, just like family. The hoodies will not be available to purchase over the counter by the general public. Once the staff knew this, it made a nice gift, even more appreciated...

    Uniforms?

Ditto Royce’s comment. We looked at Tees, polos, and a “cook” shirt for the kitchen crews. Polos and banded collared long sleeve for the servers. In the end we chose the black cook shirts with khaki shorts for the kitchen, and both the shirt options for up front. All the shirts carry our logo...

Do any of you not deliver?

Most on the board know that we’re a full menu restaurant, pizza is a 12-15% of our sales option. We do NOT deliver…sort of. No home delivery, not even on our radar, but we do deliver our full menu to our local hospital and it’s been a very nice arrangement for us. Staff there, especially on the...

    Newbie Dough Sheeter question

Let your dough warm up for that magic hour before working it! You’ll be surprised how much quicker it opens, and how much better your pie becomes. I hired 2 of my “pizza guys” from a competitor who sheets, then puts the disks back into the fridge for up to 4 days. They were used to grabbing from...

    Want to open a delco

Read the “Industry Info” tab items, you should find answers to many of your questions especially those concerning average spending, households eating pizza etc… A trip to your post office should be able to produce the number of mailing households in your area. You can also get this info at...

    Fryer Filter experiences?

We do a LOT of heavy hand-breading at our place and currently just manually filter out our oil…but it’s a pain and not the safest practice either. I know not everyone has fryers in their pizza operations, but for those that do, and use an electric pump/filter unit, can you share brands, and...

    wings

Lloyd’s offers a pan set specially made for oven roasting wings…I think it’s pretty much their std. disc, with a pan under to catch any drips. At least that’s what I make of it, maybe it allows the air to flow better under the wing and not get “that” spot on them? btw Adam, how’s your 2nd...
