    Prep Table Supreme

I am looking very closely at picking up a few of them to replace my worn out True and ancient LaRosa. They look very nice and appear to be built very heavy duty. I hope to take a close look next week at the Pizza Expo. The fact that you get a full 30" of workspace is worth a lot.

    Pricing Beer

I recently got my liquor license and will start selling beer very soon, with wine and spirits to follow soon behind that. Until I have all my equipment in place I am going to be selling bottles only, with draft to follow. My question is what are you selling you bottles for? Domestic, Imports...

Make line about dead. Anyone use a TPP-93?

I have one of those that I am getting ready to replace, it has lasted me about 8 years, with no mechanical problems. However the construction of the unit is another story. It has been falling apart for the last 5 years, all the door hinges are worn out, the lid hinges are in shambles and...

    Roto Flex

Switched from conveyors to Rotoflex about a year ago and it is one of the best things I have done. Everyone around me has conveyors and we use it very much to our advantage.

    Monitoring device in owned vehicle

We installed a GPS monitoring device in all 4 of our owned vehicles after getting very poor gas mileage and lots of complaints about reckless driving. The device runs off of 2 AAA batteries and plugs into a USB port, download the data and now you exactly where your car has been, how fast it was...

    Sheet pans or Dough Trays?

I switched from dough boxes/trays to sheet pans a few years ago and have never regretted it. We used dough trays for about 10 years and have used the sheet pans for about 3 now. We can squeeze more dough onto a sheet pan, more dough onto the rack - roughly about 50% more dough in the same...

Bakers Pride ovens: 602 vs 451

I used to have a double stack of Blodgett 981 ovens, then moved to the Bakers Pride 451 ovens. The two 451 ovens were easily double the capacity of the two 981 ovens. And then two y-600 ovens is almost double again the capacity of the two 451 ovens.

    Health Insurance for Employees

Cobra only applies only in the event the employee is involuntarily terminated. Cobra is a way for the terminated employee to piggyback onto the group after they are terminated. If the group plan is terminated there is no Cobra or anything of the sorts. HIPPA allows an employee who loses coverage...

    Health Insurance for Employees

Who out there offers health insurance for your employees? And do you think that it really helps to keep turn over low? We have had our group plan for about the last 10 years and just like everything else it just keeps climbing. It is at the point now where my portion (50% of the employees...

? for Tom Lehmann: Soft/Hard Water & Chlorine on Dough

Tom, Wondering if you can tell me what differences I can expect when making dough with soft vs hard water? I am considering a water softener for our city water as it is quite hard and leaves a nasty soap scum on everything and wanting to know what to expect. Also, what effect does chlorine from...

Are any of you taking advantage of the stimulus job program?

Re: Are any of you taking advantage of the stimulus job prog I would much prefer if they would let me keep more of my money (less taxation) rather than give me someone else’s money. I will take tax reduction any day of the week, but on principal I would have to refuse any money that the...

    Employee breaks?

Check with your state department of labor, as each state is different. Federal law is silent on the matter with the exception of minors which require at least a 30 minute break every 5 hours, and dictate how late and how early they can work.

Deck-Rotating or Converyor who has used 2 or all of these

Re: Deck-Rotating or Converyor who has used 2 or all of thes As far as missing a rotation or two having a impact on the pizza - it all depends on how hot you bake your pizzas. I run my Rotoflex at 520 and if we let the pizza go a few extra times around - no big deal, it is just a little more...

Deck-Rotating or Converyor who has used 2 or all of these

Re: Deck-Rotating or Converyor who has used 2 or all of thes Started with Blodgett & Bakers Pride decks. Moved to conveyors (both XLT & Middleby) for about 8 or so years and now I have switched to Rotoflex. I wish I had never put those conveyors in. If I had it to do all over again I would have...
