    Cheese too dark

I would look at the cheese and temp. Specifically, the balance between temp and cheese quality/quantity. I’ve seen where lower moisture cheeses tend to burn quicker than higher moisture cheeses. If you’re throwing the cheese on top of the toppings, not having enough moisture would lead to it not...

    Prompting for tipping? Tipped wages

Good point Steve, My drivers and CSRs average roughly $20-$30/hr. And even though they are ‘tipped’ their base ranges from $7.25 to $9.00/hr. They also ‘tip-out’ the cooks.

    changing mixer voltage

My electric guy says the 3-phase is: 1phase=208, 2nd phase = 120 + 3rd phase = 120 (result=240). That’s why its referred as 208-240v. He says the 440 needs to be ‘stepped down’. If your building is ‘wired’ for 3 phase, then the ‘step down’ occurs at the transformer on the ‘pole.’ If the building...

    changing mixer voltage

My electric guy says the 440 should be ‘reduced’ via transformer down to 208-240v.

    changing mixer voltage

Ooops, so you already have 3 phase power to your building. I’m sure if the manual allows for changing the voltage, ie mine does. Check the name plate on the mixer or motor.

    changing mixer voltage

Thats just it. Get the motor and you don’t have to touch your mixer. Just connect it to the phase motor.

    changing mixer voltage

I’ve posted before about a phase change motor. You can probably get one for around $700 - $800. Once installed, its connected to your in-house power panel, and your mixer is plugged into it. You start it first, then power on your mixer. It takes single phase and converts it to 3 phase. Far...

    How do you take inventory?

I do a complete physical inventory twice a week. If anything looks out of order, I compare that number against the sales period and last inventory.

    How am I doing?

WOW! I have absolutely NO IDEA how you’ve managed to stay in business with only $5K/month in sales… You are one tough fellow - congrats on hanging in there! Besides your initial investment, you’re going to have to step on another limb, and throw some $$s towards advertising and marketing. The...

    Marketing Manager

At your sales level, I would focus on developing production management first. This would leave you more time to manage and develop marketing. Pay yourself first and then when you’re making too much money, add another employee. Good luck.

How much did it cost to open your pizzeria?

In my 6th year. Spent about $80K opening, and lost another $150K before I started making it back. Different owners bring different skill sets to their businesses that in turn provide better values. IE, having a great deal of computer experience, I set up and maintain 365/24/7 support for my POS...

    Great marketing & great food...

Well perhaps, but maybe it’s just… U.S. consumers swiped their credit cards more often in March after cutting back during the previous two months. The increase helped drive overall borrowing up by the most in more than a decade. The Federal Reserve says total consumer borrowing rose $21.4...

Anyone else having a killer week?

Joker, congrats on your hard won success! Paul makes a great point! Its all somewhat relative, and what works in one market, may not work in another market. You’ve just got to try. I’m one of the places with no discounts and no coupons. There are days where if I had a special offer or coupon...

    Soft Serve/Pizzeria

Dear Brad, I suggest Currywurst or meatballs: http://www.inc.com/jon-burgstone/the-ep … -bros.html Don’t you think your comment is “out of context?” Or do you just like manipulating the subject? Guys like you seem to be quick piling on a response that isn’t popular. “read between the lines”...

Buying Existing Pizzeria with the Building

Inquire as to what other restaurants are doing as well as rentals. Talk with the locals. If you’re really interested, spend a week or 2 there and investigate the business climate. Good Luck.

    Soft Serve/Pizzeria

Seriously, I bothered, and told you what I thought. Take it as you will. Why not sell donuts and breakfast too? Heh, you can add hotdogs & burgers… What about seafood…?? Maybe now you see my point, and perhaps not. Leave Ice Cream to the “Ice Cream shops.” If you’re that excited about it, open...

    What would you do??

rainaldis, I appreciate your frustration(s). But since this pony has been ridden, lets not miss an opportunity to learn and develop. DON’T let yourselves be cornered. Take control and determine the outcome. Believe me, this can always become a win/win. If theft and dishonesty are not the...
