    cheese portions

Of course we charge for extra cheese. But we didn’t jack our prices 50% to cover the cost. The extra portions just increase the damage done. Although, if it continued to rise to, lets say, 80%+, I’d just drop it as a topping.

    cheese portions

I’ve posted our servings before, but they’re in the norm, if not a bit more generous. What’s killed me the past few weeks, and perhaps I’ve been more sensitive, is the number of “extra cheese” toppings requested on pizzas. Its like customers are aware of the huge rise of the cost of cheese and...

Someone looking to buy my shop... What do I do?

First, I have ZERO experience in this particular situation, only what I’d do. Steve is a lot more experienced and should chime in soon (once he’s done fishin). Having said that, I’d tell the guy and his attorney, only serious buyers are considered, and serious buyers have no need to ‘test drive’...

    Portion Control

pcuezze, I hurt when I read what you posted. For the year ending 2010, our total COGS (includes all paper & alcohol, beverages, T-shirts, etc… ) was right at 21.5%. So far this year (thru 13 Mar), we’re at 20.5%. While proper portion control is paramount, so are your price points. Try cutting...

How Do You Collect On Checks Written From Closed Accounts?

I also like it when they try, “I lost my debit card, can I just write a check?” Ummm, we do not accept checks. See you when you get your debit card replaced.

Your distributors! I get free boards and sandwich boards from Coke, ROMA, SYSCO, and FIVE beer distributors! I also get free full color custom advertising posters for holidays and such. If one gets broken, they fight through the door to be the first to replace it with theirs.

How Do You Collect On Checks Written From Closed Accounts?

Sure, file a police report. Do some research, I believe there’s a process * for sure…( I’m certain someone at your local police station can help you) I didn’t bother. I stopped accepting checks sometime in 2009. I think the total for 3 years was about $500 or so. I wrote it off as bad debt last...

"Is it alright if we brought in...."

Part of our reservation policy is explaining can’s and cannot’s. We permit cake, however we promote our desserts. We also permit ballons and such, as long as they clean-up. We do not permit beverages or items of food, whether or not an equal is on our menu. There are certain times we do not...

    selling pizza in local bars

Okay. You’re crazy. I know of 12 or more bars that have our menus and magnets on some of their coolers. As for delivering the pizza (or whatever), its reported to the bartender who directs it to the customer from there. Is it big time business? No. But it is some business and some advertising...

    selling pizza in local bars

BC I wouldn’t do that in a million years. My store, business, is in the business of selling fresh baked pizza. We’re doing okay with that. To change what I sell, would change my business, and why the heck would I change something that is working? So I could compete with the hundreds of...

    selling pizza in local bars

Easy, give them your menu & magnet. Make sure they know your phone number. Other than that, there’s no deal to work out. They want pizza, they call you, just like anyone else. Note that, if they’re doing their job, they’re promoting their food. But in kindness to their customers, they may...

    Menu Price Increase

    Menu Price Increase

I revise menus every year between December and February. This permits me to revise prices, add or remove items, or change the layout or appearance of the menu. Afterwards, I order box toppers and reprint menus for the year. Every topper and menu includes: “prices subject to change without notice.”
