    Dough Tray Vs. Sheet Pan & Saran Wrap

    I’m partial to saran wrap and sheet pans. We put them in a rack in cooler. At our old location I couldn’t wait to get dough trays we did and one of the many things I DON;T miss about it! 😃

    Dough Rounder

    We don’t use a rounder…in all 17 years haven’t even considered it…so find the thread interesting. We do our prep in the early am no distractions. Two people can get each batch of dough balled before the next batch is done mixing. Doesn’t take anymore time than anything thing else we prep.

    What a week for equipment....

    When it rains it pours… It is nice to have the money to pay for it so it is just an inconvienence rather than a catastrophe. Always a good reminder to put a little money aside for those emergencies. Always a good reminder to change the filters and watch the fins… Good News…you should be okay...

    Urgent HELP needed....

    without a doubt a pos is on our list of things we need. As you know we just closed and sold a location. Gonna enjoy the debt free train for a bit and save cuz I would like all the bells and whistles. LOL No question with our volume we should have gotten one years ago…so we continue to learn 😃

    Catering

    At a minimum I would say 75. Catering is alot of work. You are basically setting up a mobile restaurant with a buffet. Anything under 500 bucks would not be worth doing…in my opinion. We offer “carry out” catering for smaller scale events.
