    Manual ordering sheets

I am loking for a supplier of manual ordering sheets. I looked at the pizzaforms.com site and honestly I do not understand having 5 or six carbon copies per order, and the sheets did not look like they would fit well on a ticket rack. Please, advise me if I am missing something.

    Pizza Buffet

I run a daytime buffet, 11am -1:30pm as well as a night buffet on Wednesday and Sunday. A buffet can be profitable but you have to seating for at least 50 people and be able to turn over your tables at least once. Your food cost are going to be fairly high, mine run almost 40% on buffet, but my...

    Menu expansion in pizza shops

Like most of you I struggle with menu expansion. My menu is very basic pizza, oven baked wings, and calzones. I kick around the idea of adding pasta. I remember when Little Caesars use to offer pasta, delivery, and different size of pizzas. I think that was the beginning of their troubles in...

Anyone Use CFM Concepts For Menus?

I use Grande and considered the menu program, but it is very expensive even with the subsidy. I prefer Takeout Printing, they have an awesome full color 11x17 menu that is just as good if not better than CFM (my opinion) and a lot cheaper. I guess what I like most about Takeout Printing is that...

    Buffet Pizza & crispness

I also run a pizza buffet concept similar to CiCis. The metal plates you put your pizzas on are what is making your pizzas soggy. A little trick we use is to place a pizza screen between the pizza and the metal plate. This may sound crazy but it works and you do not have to buy any extra...

    Salt/Sugar/Yeast mix in dough...

Be careful putting the yeast directly into the cold water. The cold water can shock the yeast and the yeast will not activate. In my experience adding the yeast, salt, and sugar in different stages has not effected the outcome of the dough. Water temperature, water weight, and flour temperature...

Anyone in ski resort area looking for excellent employee?

I have a manager and a great friend that is looking to move to a ski resort area. He is by far the best manager I have ever had in 7 plus years. He has just gone through a divorce (no kids involved and no drama) and would like to move an area where he can ski and snowboard in his spare time...

    School Fundraiser/Equipment

My theory on dealing with schools is probably different than most. I do not discount my product. My business taxes and home taxes support the schools more than 90% of the population. I never turn down any school when they want an ad in the newspaper, yearbook, etc… I have school nights and give...

    Left dough cross stacked

You will be ok, unfortunately I have made the same mistake a couple of times. I would take the dough out of the cooler a couple of hours before you are going to use it and spray it with water. The dough will remoisturize and work just fine.

    I need advice.

Just like you I tried to get my employees to cut vegetables, but after about a year I gave up. The green peppers or onions were never cut consistently the same, and there is nothing like having to cut vegetables during the middle of a Friday night rush. My blood pressure and fustration has gone...
