    I also have the CL52 that I use for all our veggies & meats for pizza toppings that we also use to shred cheese for some specialty pies we do. Not sure if I trust it for all our cheese volume though. What I was referring to was their VCM type mixers instead of a processor like the ones we have.

    We moved from a larger sit down location next door to a smaller slice shop model almost 2 yrs ago. We rented our old space (we own the building) to a burger shake concept. Although there is minimal overlap with appetizers etc it has worked really well and traffic has increased thus helping us both.

    we have to pay 15yo kids that hourly rate to wash dishes and make salads (minimum in CT will go to $15 next month). Nobody wants to work in the kitchen when you can make over $30/hr delivering.
