    Need Your Opinions/Advice

Desperate people do desperate things. The $10 was a diversion. Everyone is different. I’m straight up about things, so I’d talk to him and get some clear answers and tell him what I think happened. I don’t have time to treat things like a fictional TV detective mystery. That said, I also think...

Changing the name of a relatively successful pizzeria?

Ah yes, the old money thing. You going to call it something that has a connection to the old name? I think something like D’s has a good ring - simple and keeps some continuity. “Hey, let’s go to D’s tonight,” or “Let’s get a D’s pizza . . .” Good luck, whichever way you go.

Changing the name of a relatively successful pizzeria?

How about “New Name, New Look and even Better Great Food!” I think you have legitimate reasons for a change in the name. I would think you’d gain, not lose customers. In fact, what you have is a great opportunity. You have a reason to advertise, instead of the usual, “Buy more of the same at a...

anyone ever challange another pizza place to a taste test?

I agree with bodegahwy. I wouldn’t waste time and energy on something that may backfire. Taste is subjective. Some people like Coke and others like Pepsi. Some people like thin crust and some people like thick. Some people like your X pizza, but like your competitors Y pizza better than your Y...

Using the BUSY Wal-Mart across the street to my advantage?

Making me take your flyer off my car and disposing of it is a sure way to get me to never order a thing from you, and tell anyone who mentions your business what I think of you. Doesn’t Walmart sell frozen pizzas? I would spend my time looking at the exterior of my business, making sure it was...

Dough is great but needs a little something

The target temperature of the dough can be correlated to the texture. Measure the dough temperature during mixing. About 28C (82F) is a finished temperature used by many people. A higher temperature will make the dough softer.\ Another way is to take a golf ball size piece and spread it apart...

Yeast Level - How much is enough

I’ve never used butter, but it sounds expensive. 😃 If you’re using olive oil, be sure to use regular olive oil, not EVO. You might want to cut down the sugar some too. 1% might be enough. Good luck.

Yeast Level - How much is enough

I would use 0.36% (0.35%-0.40%) IDY. I know of no disadvantages of IDY. I would use 3% olive oil. I’m sure others will be offering alternative percentages.

I would say proceed as if it’s a fresh location and go about your due diligence that way. You’re not buying a name or good (or bad) will.

wanted to share this resume that i got today

She may be an honest and dependable worker. The original poster makes grammar, punctuation and syntax errors in every post, just like the person applying for a job. I wouldn’t be so quick to make fun of people, particularly those on the low step of the wage ladder. Why don’t you do something...

    Free Delivery

Let me say it again… markets and customer expectations are different. What works for you could be the kiss of death in another market. Delco and traditional pizza businesses who offer delivery are not even the same species of business. Costs do not translate across national borders without...

    Free Delivery

I believe that every market is different, and what works in your market and culture does not usually translate across boundaries. There is no correct answer. I think the only absolute is that it’s your job to strive for the highest price you can get. In my market, people associate pizza...

Is this just another one of my crazy ideas or will it work?

OK, here’s another one of my ridiculous off-the-wall ideas: Why not use the van for marketing during your slow time - afternoons, maybe? A promotion with a local radio station where they do a remote at some location (car dealer, furniture store, etc., since they are not your competitor) and...

    $10 pizza

I think you have to elevate the fight directly to the customer. Address it in your advertising. You have nothing to lose. Oh, and you better be making better pizza… “Sure, some places sell cheap pizzas, but can you digest them? Life is short – enjoy great pizza.” “If this was your last pizza...
