    Seems like your cheese cost is adding quite a bit of the percentage. We use 12 oz of cheese on a 20" thin-crust pie. That’s 26 square inches per ounce of cheese. Your thin crust is at 17.6 square inches per ounce. Perhaps try some cheeses other then Grande as it sells at a premium.

    When you clean it are you soaking it in a different sanitizer then you used to? I’ve found if aluminum is soaked too long in a high bleach solution , the bleach will free up the aluminum and cause such a situation.

    Talk to 3 other business brokers. I always get 3 to 4 quotes. What could you get by liquidating the equipment versus selling the location? If the shop is losing money and the location is poor, it might be a tough sell. Although, as they say in India, “There is a seeker born every minute”.

    Pay rate is more a function of where you are working then where you have worked. In the San Fransisco, Ca or Manhattan area, the cost of living is very high thus people tend to be paid more. If you are in a small town with cheap rents, it might be better to see what area wages are as a reference.
