Adding Pasta Without Having A Stove

Giuseppes Pizza: There is a large selection pre-baked noodles. You name it they got. I use a distributors brand. Can’t remember the name off the top of my head. Used to use a shell noodle that was ready to go from Reames I think. Store in the freezer thaw out an insert at a time and you’re good...

    Makeline Itemization - CHEESE!

goomba: Okay, next time you make a pie, grab a stopwatch. If you hand toss, don’t time until the dough is ready. From sauce to oven time it. My cooks were pushing 45 seconds weighing everything on a 3 topping pizza. That’s one guy making the whole thing. My cooks are trained to scale everything...

POS goes down...need delivery order forms!

Patriot'sPizza: We thought we were okay 2 years go. UPS on all workstations & server. But a direct hit proved otherwise all but 2 stations were fried beyond repair. They were old Rapidfire systems so it finally forced us to upgrade. 😃 But wait it gets better. That was my older store. My newer...

    Mozzarella through the roof

royster13:  This confuses me as well. Applebee’s or those other sit down casuals will run $10-12 a person (not including tip of course). But at my place you can easily feed four for $25.

    Mozzarella through the roof

New York Charlie: You know all that ethanol fuel their making? Corn. So feed prices are up. Add to that transportation prices. Add to that a minimum wage increase on the way. There are your causes- haven’t seen the bad part of it yet. It could get real ugly folks.

    School contracts or church contracs

JAYP: We had the one of the local districts high school lunch program. It was quite a boost of income. But we came to realize a couple of things. If kids are eating your pizza at lunch, do they want it for supper? We found out the answer was no. What is your memory of school lunch? Mine isn’t...

    ValPak

guest: We saw anywhere from 1-6% return. It REALLY depended on the drop date. Valpak has not control of this. They have a window. So if we were lucky and Valpak hit homes Thursday we would see 4% or above. If it hit Friday or Saturday we’d get the below 4% response. Because of this we’re not...

    Assistant Mangers and Shift Leaders

j_r0kk: That’s refreshing to see from another operator. My hourly managers don’t work overtime. If they need to work overtime we don’t have enough cooks/servers/drivers etc. Salaried managers work 40-45 hours. If we’re short help they cover. I find that helps keep your management proactive...

    Assistant Mangers and Shift Leaders

j_r0kk: While some may see a payscale that is low, I see a system that looks extremely sound. My only concern would be how do you keep those MITs around? If you promote within and your training is thorough, where is the room for advancement for the MITs? 1 store manager spot, but 4 guys vying...

    closed on easter sunday?

tyson: We didn’t open until 4 pm last year. Sales were down over the previous year (when we were open at 11 am) by $100. I can’t turn down 2k in 5 hours or I would be closed the entire day…

Gamerooms? Anyone have them and what size

Our game room is 15 by 20. We have 19 redemption games. We have a nice little redemption area for the prizes as well. We stayed away from video games because some aren’t very family friendly.

    Anybody using Speedline or Firefly?

Anyone have a 3-step employee termination policy in place?

Re: Anyone have a 3-step employee termination policy in plac We document EVERYTHING! Not having a progressive discipline policy in place is just asking for problems. Here’s what I do: You fail to comply with a policy you get a verbal warning. I document it in a program I found a couple of...

    Moving In Next To Competition

One of my stores is right next to a Pizza Hut and a buffet house. The other store has 6 full service restaurants, 2 pizza shops, and at least 6 fast food shops. Being close to competitors is a good thing. It drives TRAFFIC. It’s up to you to make sure they choose your shop over the competitors.

Anybody taking checks by phone like a credit card? Opinions

Re: Anybody taking checks by phone like a credit card? Opini We looked into going check free. But in the end anything we would have saved from NSF, we were giving right back and then some to the CC companies. Between 2 stores the bad months will see 1k in bad checks. Out of 200k in sales thats...

    Coke & Pepsi Pricing?

Coke 2 liter: .97 cents from Coke. Don’t know cost on 20 oz. When I was with Pepsi there 20 oz prices were insane so I’ve never used them.

    Box Topper

How aggressive are the discounts on your box toppers? I’ve always been a believer in don’t irritate a customer that paid full price with a box topper offer that is a better deal.

    Fresh or canned mushrooms?

I use fresh. Increased my portion for mushrooms to combat shrinkage. Don’t like canned mushrooms personnally. Look like rubber door stoppers. A semi-blanched mushroom is a as close to canned as I’ve ever gotten.

    Pre-cut veggies

Our diced tomatoes, onions and green peppers are from Fresh Express. 1.07 per pound for the toms, 1.01 per pound for the onions & 2.46 per pound on the green peppers. All of the produce comes in fresh vacuum sealed bags. We get it the same day it hits the distributor. They get the truck in at...

    Pre-cut veggies

One thing to remember about pre-cut vs. whole veggies is yield. When I get a 10 pound case of diced tomatoes, I get 10 pounds. A 25 pound case of whole tomates doesn’t necessarily yield 25 pounds of diced product. Onions and green peppers are the same. Also don’t forget about the lack of...
