I do a NY style with Lincoln’s --485-490 at 6 minutes. Nice bake but I should probably go a little longer and lower the temp for a slightly better bake but I like the speed.

If you get rolls everyday like we do, you can use bread boxes…durable and free. Only thing is capacity about 30 or so, but just empty it out.

About once or twice a year I send out $5 off postcards to our 800 best customers ( 100 or more lifetime orders or something like that). We get 50-60% redemption and a nice little jolt from it. Normally I’ll do that when I re-do/re-price our menus.

We do a NY Style with a sheeter in conveyors. I’ve had the sheeter for 5 years and have never(knock on wood) lost a day due to breakdown. I keep a rolling pin for backup.

Re: pizza box taste/ Flat Pak We use 12 X 10 inch wax pop-ups. very cost effective, tried drie-pie, I wasn’t impressed and it costs way too much.

We buy it ready to go in bags, I think it’s land o’lakes? $53 per case, but worth every penny to me as making it was a pain in the a**
