    Spreadsheet

So then you are faced with the time cost of learning Excel as well as building the spreadsheet. The upside is that all software is developed in a way that will satisfy the majority of need for the majority of customers. It just business economics. But what this really means is that, without...

    Dairy futures

Wow, $2.40? I haven’t got cheese that cheap since the end of last year. Last week it was running $2.83 here for LM block mozzie.

Announcing the Think Tank Reunion 2014 in Las Vegas

I did find a decent policy through another insurer, thanks 🙂

Announcing the Think Tank Reunion 2014 in Las Vegas

Sure would be fun to attend the exposition as well a meet fellow think tank’ers, but alas, I cannot afford it. One thing that would have been really nice was if the PMQ staffers would have pointed me to one of their sponsors, PizzaInsurance.com, when I was asking last month for where to go for...

    Big Dave's Food Cost Pro

Yep, I agree with Scott. Just built a spreadsheet and since I already had the software (MS Excel), only my time is what it cost. Easy to input the new price of any item and see it instantly update all my costs and margins for every item I sell.

    Detroit style pizza

I don’t recall ever having a pizza in Detroit, but we do all of ours Chicago style (real Chicago style… like they make out in the 'burbs, aka thin crust) and use high gluten flour.

    Insurance rates

I’ll look them up, but I forgot to mention I was in Washington State. So I’m not holding my breath they will carry businesses way out west. But thanks for the reply 🙂

    Insurance rates

No one has any recommendations for an insurance carrier? 😦

    Insurance rates

My insurance went up a whopping 36% this year. I just own a very small pizza place in a tiny town and none of their arguments as to why it went up are justified or logical. No claims, and they told me, well, if my place burnt down, it would cost more than it did a year ago to rebuild. I call BS...

    Utility rates

You’ll never get an apples to apples comparison including all the taxes and miscellaneous charges. Just tell us what your demand charges are, which is the charge for the electricity you actually use. Here in eastern Washington, its 8.2 cents/KW hr. Here is as color coded map for the US…...

    STRANGE Customer Request

I haven’t tried to flip a pizza on top of another and then cut it, but I have tried taking two slices and flipping one on top of the other. We do it occasionally, but with a lot of toppings it can get messy real quick. We call it a “Pizza Sandwich” 🙂

    Oil for 60 quart hobart

I just talked to the local Hobart service company in Spokane, WA, and he told me that any 40 weight, non-detergent oil will work. He also suggested it is far cheaper to just get it at a local auto parts store, since we are over 120 miles away from him. Nice guys… I like their honesty and not...

How long before you broke even on your first location?

Break even to include your original purchase and investment? Or just break even so you are covering your operating expenses? I think you are referring to the later. We did it by the second month, but only because I am very cost oriented. I had never owner/operated a business before, much less a...

Public restroom required for DELCO with no seating?

Government bureaucrats gone wild creating laws…only the legislative branch should be able to. One of biggest problems with our country right now. At least in our area, NE Washington State, we wouldn’t need a bathroom for a DELCO only place. Since we have a dining room, we do need a bathroom...

Reach-in coolers and freezers... what style to get?

Whatever you do, I suggest staying away from the Arctic Air brand of freezers. We have had nothing but problems since the very first day with our brand new AF23. Been dealing with the manufacturer, their national service company and local technicians for 7 months now, and the manufacturer...

    Pizza day at Schools

This is the core of the reply I got when communicating with the superintendent of the only school district nearby: “…The thought is interesting, but we have regulations with our federal lunch program and our students on free and reduced lunch…” So no-go for us :\

Thanks Tom… man that really sounds delicious!

    Dessert dough recipe?

BTW, I might add that our regular pizza dough isn’t appropriate because we put garlic in our dough (which people absolutely love).

    Dessert dough recipe?

Anyone have a good dessert pizza dough recipe? I’d prefer a non-yeast, cookie type recipe, one that would last in the refrigerator when times are slow. I’d like to do a 35-45lb batch, which seems to be about the right size for our Hobart P660. I’m planning on trying both chocolate chip and...

    Bacon

Have you tried Daily’s bacon? I’m getting 10lbs of jalapeno spiced bacon crumbles for $39 and some change. It’s really good and the only bacon we use. Very little fat and very consistent for us. We get it through Food Services of America.
