How to treat a new wood peel

Ah, ok. We’ve always build our pizzas on screens and cook them the first 4 minutes on the screen so the bottom does not burn before the top browns up nicely. Then the last two minutes or so we take them off the screen to crisp up the bottom. Why would they be not allowed?

Thanks Jim, but why would you mark sizes on them?

How to treat a new wood peel

I need to get some new wood pizza peels and I was wondering how/what you do to treat them? I was thinking of just oiling them with mineral oil. Anyone do anything different? Thanks 🙂

    Help! Asbestos in my oven?

Ok, here is what I did. Since I had taken the top off, and seen I might be in a predicament, I decided against tearing apart the ovens, piece by piece to haul them out myself. I reinstalled the top, sealing the insulation back in, and gathered up some stout construction workers and hauled them...

    Help! Asbestos in my oven?

Thanks George. I did call Lang and they have no records for the ovens that old. They tell me that the current owners of Lang bought the company about 6 years ago and the older records for ovens were not transferred. The only way we would know for sure is to have an insulation expert take a look...

    Help! Asbestos in my oven?

I have some old Lang deck ovens I am replacing and the things are so huge and heavy, we decided it would be easiest to take them apart in chunks to haul them out. these oven have to be a good 20 years old… I cannot even get spare parts for them anymore. When I removed the top metal cover, I...

Free pizza if you order in Spanish

Guess that leaves me out. I’ll just have to wait for the pizza shops in Mexico to offer free pizzas if you order in english… of course after I dodge all the cartell hoods and bullets to get there.

    Soft pretzel dough recipe

Thanks Nick. I did try the first method, I found in the link above, and it really came out good. The key is that this recipe incorporated the Beer, which is important as these are primarily for customers of the brewery next door. If I was to adapt your recipe, would I just substitute a portion...

    Soft pretzel dough recipe

Yes, I have read some about that. Being a primarily pizza place, I really hesitate to set up a station specifically for dipping in lye wash and having people use gloves and eye protection… it’s just that little bit too far to go for pretzels for us. Thanks for your input though, we’ll probably...

    Soft pretzel dough recipe

Anyone have a good soft pretzel dough recipe they can share? We have a awesome micro brewery next door (it’s their anniversary) and I would like to whip up some soft pretzels and incorporate some of their finest beer in the recipe. Thanks 🙂

    Tomato/Pizza sauce king?

Well, maybe an honest salesperson for once 🙂 He said they would send me some samples; just coordinate it through my salesperson. I’ll have to follow up on that and try their products. They had little spoon samples at the show, but I need to make a bunch of pizzas…maybe even have some regulars...

    Tomato/Pizza sauce king?

I was at our annual FSA food show the other day and ended up talking to the Stanislaus rep. According to what he says, they are pretty much the king in the pizza industry (with regards to tomato and pizza sauces) and at all the Pizza Expos (which I have not been to), everyone flocks to their...

Please help us stay open, possibly!!

Currently, Washington state has the highest minimum wage in the nation (at the state level) of $9.04/hr. It is set to increase annually based on the cost of living increase. This really does defy any logic. What happens when wages go up? Businesses cannot simply continue to eat this cost and...

Gift Cards Resulting In Reporting Sales Twice?

I guess it depends on where you live. In Washington State, delivery charges are taxable income

Gift Cards Resulting In Reporting Sales Twice?

Bodegawhy’s first way is the correct way, at least in Washington State and in accordance with accounting rules. A gift card is not truly a sale, it is only a liability for a sale. In QuickBooks, I have set up a Gift Certificate (or card) account that is a liability account and have set up the...

    Rest Depot ????

$1.70-$1.75 is pretty darn cheap. I’ve been paying $2.06 for the last couple of months (Della Vita from FSA). I could get it a little cheaper, but the manufacturer of the cheaper stuff (California Gold from Cisco) can’t seem to keep from getting holes in his packaging and sending moldy cheese...

Minimum viable product - pizza shop

Wow, where would you find a used commercial freezer for $100 and fridge for $50? Maybe a residential, but I would find it hard to believe a commercial model that you wouldn’t be having to work on all the time…and that time is money. Our local health department will not allow use of...
