    We switched to pizza cloud at the beginning of the year. It has worked out great for us, the system allows you to do so much more than a traditional phone system and the customer support has been excellent as well.

    A pizza operation doing 200 k in sales really has no good will to offer, the business its not overly profitable at that level and it would be hard to find someone to purchase your name, recipes and procedures at that rate.

    I understand you can also blanch or steam the fresh mushrooms. I have seen some people cook them through the conveyor oven with some liquid margarine after lightly seasoning them to add some flavor.

    sausage

    WE buy a fresh local bulk sausage and cook it on our flat top and cool to put on the pies, it works out well for our operation.
