    MMPS360 - Controller display "N1RNG"?

Just found a service manual, it says if the controller is reporting 909 degrees then the thermocouple is open (or it came unplugged) (on page 54 as printed in manual) http://www.middleby.com/service_2000/technical_pubs/pdf/mm/47829-c1/47829-c1-3.pdf

    MMPS360 - Controller display "N1RNG"?

If it’s saying 909, I’d lean towards the probe and the controller is doing what it’s supposed to as 909 is most likely above what the controller is programmed to expect… If you keep hitting the live temp button. Does it stay constant at 909? Have you tried wiggling the probe wire and see how it...

MM PS360 - Went down to 200F and would'nt go up from there.

My first thought would be a high limit sensor going south if it was holding at 200… Either that or the control cabinet got too hot…

    Increasing Compensation

Money talks… You could try paying them an hourly wage, and then a percentage of the profits as bonus… Go by profits as it will help with both labor and food costs… Granted you may want to adjust here and there on a person by person basis so that the slackers don’t get as much of a bonus as the...

Shop owned delivery vehicles - Insurance / Gas / Pay

Last I knew where I live, if wages plus tips don’t reach hourly minimum wage, you have to supplement to get them there… Personally, my opinion is if they’re working in the shop as well doing jobs other staff would be getting paid normal minimum wage for, then they need to be paid normal minimum...

How do you deal with power outages?

Only option I had was to wait and see if it came right back on… Otherwise it was shut the doors… If you go automatic standby you have 2 choices… Size for select loads such as refrigeration, cooking, hood, computers, phones and lighting and not pick up hvac… Or you go big and pick up the entire...

You can put me in the “I don’t think I’d lease from her if I were you” camp… You could potentially lose everything if she screws up somewhere… Then again… If your states dept of revenue or the irs seizes the building, maybe you could buy from them for a good price…

    Kitchen Flooring

I had the quarry tile and hated it… The flour would get in the grout lines and then it seemed impossible to completely get out, then you’d mop and it would turn it into a paste… Seemed like a couple times a month I had to take a stick and scrape out all the gunk that built up in the grout lines…...

the indoor ones I usually just took compressed air to… carefully (don’t want to bend any fins). The outdoor ones I usually just took a garden hose to… Be sure to wash away from the electrical stuff so that you avoid getting it wet as much as possible, and shut off the power first.

    Counterfeit Bills?

MidnightRider: I didn’t have any problems that I know of. Its been a few years since I’ve been in the biz but I try to keep up with it. Im mainly focused now on country clubs/bar stuff, and the blacklight is something ive come across in that industry. Havent seen it first hand yet, but might...

    Counterfeit Bills?

The embedded stripe inside the larger bills will glow from a blacklight. So maybe a small battery operated fluorescent blacklight at the register that they can pass the bills over to verify the stripe. Also, the stripe tells what denomination the bills are as well, and is less awkward looking...

    Utility rates

Decidion: Demand charge is different than the usage charge, at least for us anyway… For us, commercial and industrial entities pay a rate for the total amount of electricity used, plus we also get an extra “demand” charge based on our peak usage for the month.
