Prep table not cooling below 58F

I agree with the above posts clean the coil. Also check to see if the evaporator is froze over, you may need to get that defrosted. It is probably not the compresser, yet, if it is still running but you may want to call the company and tell them you have problems and getting somebody into...

    repainting signs

It is raised letter sign, so it would be easy to paint myself. The blue paint faded and is almost completely gone and the red paint is fading to pink. the rest of the colors are still great. (but unfortunately our name and number on the sign are the blues and reds 😦 )

    Special Requests

I have a simple rule: if we can’t do it 100% of the time for 100% of the customers, we won’t do a special request. I do 1/4, 1/2, 1/3 and slices on pizzas but they get charged halfs and whole toppings. Were we get the most special requests is wings, where they want 20 1/2 one flavor and 1/2...

    Prep table cutting board

Does that cleaner work better than bleach? I buy the smaller cutting boards for prep work. And only use that cutting surface for cutting subs.

    Old Lincoln Impinger

Thanks Rick, we did speak to them. They wanted us to take the ovens there for a complete rebuild. We don’t feel that that is what we want to do with this old of an oven. We are just looking for ways to get it operational in case we need a spare, or to run for a month or so, for my good oven to...

    Old Lincoln Impinger

We have an old style Lincoln Impinger 1000 conveyor oven. Does anyone have any ideas or suggestions to convert the old style gas valve without having a complete rebuild done. Or does anyone have an old style valve around that they want to part with?

    late customers

I try not to be cranky, but sometimes the customers mess with that goal. I guess I will keep it on a case by case scenario - - but some people I may tell I am walking out the door by 10 after with or without their food 🙂 .

    late customers

How long after close do you feel is acceptable to wait for a late customer to pick up an order? any calls after 10:30 we politely let them know that we do close at 11:00, so it’s not that they don’t know we are closed.

    what would you do?

Sounds like your manager is generally a good employee. As I keep getting told " pick your battles". Look at it from her point of view, the boyfriend has been in the kitchen before even when you were there, she may not have done it to be defiant of your new rule, just didn’t think you meant him...

    credit card tips

As of right now, we do not take credit card for delivery orders, so it’s not something that was once given then taken away. It would start from day one. The hassle of the calculations may be the issue, and a good point. I think I will look into the charging of a $1.00 for use of a credit card...

Conveyors & Pizza by the Slice

For slices we push the pie in the oven so it is not fully baked, then for serving we place on a paddle and push it in the end of the oven till the crust gets crunchy–1 to 2 minutes. for subs we put in the window at the 1/2 way mark, for subs that we just need to melt the cheese, we just push in...

So is Super Bowl Sunday your busiest day of the year?

We did our 2nd highest sales of ever. Extra help come in at 4:00 and was sent home at 7:00, with dishes done up and counters wiped down. One of my girls that has worked 13 superbowls with me asked why we weren’t as busy this year. . .when I told her how much we did, she asked if next year we...

So is Super Bowl Sunday your busiest day of the year?

I am with Pizzaman 215 on this one, The pizza side on this day is a cake walk. But the wing side is another story. We are a smaller shop in a small town, but on Superbowl I sell as many wings as I do in an average week. This year I will have 450# on hand. We also serve carrots, celery, ranch or...

    too busy!

Congratulations and good luck. I have no advice to give on the oven. But at this time the main thing is to keep your customers informed of how long it will take, If it’s taking an hour to get a pizza out let the person know when they place the order they will either wait or cancel at that time...

What are your hobbies outside of pizza, pizza and more pizza?

Everybody is so talented and social. I like doing things that I can just block out the outside world, reading, painting, cross-stitch. If I have to go into the outside world, I usually wear a helmet. . .atv’ing and snowmobiling.
