    Hidden Valley Ranch Recipe

when we made it years ago, we found heavy-duty mayonnaise (helmans type) worked the best, I believe we just used regular buttermilk. But it is still pricey because the recipe doesn’t really make a full gallon.

Any experience and/or opinion on Comtrex POS

I was in Pepe’s Pizza 2 weeks before we took over our current shop. I have a comtrex system that we put into place over 6 years ago. I believe the system was originally designed for sit down restaurants—but it has adapted to pizza delivery type businesses. The pros are you can program anything...

    Phone training

How many phone lines do you have coming in? I only have two lines, I use a cordless 2 line phone from radio shack that works for this purpose. When I first start the training, I have the employee listen in on the cordless to hear what is going on, then I switch and take the cordless and let...

    RE: Message for George Mills

I found double-panning the top prep part helps with the freezing. I have a shallow containers in the bottom and then set the full pans inside of these, keeping it that they’re is no gaps where the cold air can come out or the warm air can go in seemed to help. Also with the list from above of...

    Boneless Wings?

ask your supplier if they carry an all white meat chicken nugget, maybe some suppliers aren’t using the “boneless wing” as a descriptor. The ones I tried were from Pierce, brakebush, wing ding and kochs, at least those are the ones I remember the names of.

    Boneless Wings?

I’ve tried about 6 different boneless wings, and all of them went from freezer to fryer. We do ours the same way we do the wings, they get tossed in sauce before serving. I don’t know what brands you have available to you, or what your operation is. but some we tried were very good after they...

    Daily Specials

gbomb: They do get raised when we do raise menu prices but we get more dissatisfied remarks and grief with the special prices going up than we do with the menu prices. For some reason they can remember 20 cent wings and pizza and wing special being $12.99----yep that was 15 years ago.

    Daily Specials

I’m in the opposite boat, I wish to get rid of my daily specials, but customers have become so accustomed to them we are finding it to be impossible. So if I could offer a suggestion, drastically change your daily specials every 3 to 6 months, so you don’t fall into our rut. If you don’t plan...

    Re-Thinking Delivery Charges

Registered Guest: Customer perception is a perceived value not neccessarily cost. Unfortunately somethings that are offered as free the customers don’t understand that it actually costs you money to provide. Take napkins for example, how many people come in and take half a container of napkins...

    Employees

can’t run a business with them, can’t run a business with them :? For the past 15 years my management style has always been the observer, noticing where employees have strengths and praising them, and noticing where they have weaknesses and helping to improve them. however, after a recent...

    I am leaving Think Tank

qcfmike: I found it kind of refreshing coming to this post last night and seeing the good-humor banter going back on (even if it was typed in Austrailian  ) I don’t think most posters on here ever mean to publicly insult or offend their fellow posters, unless they have a personal agenda or...
