Prep Table Crash - - brand to replace with

Nick, would a compressor ease your pain for now? IT seems the least expensive way to go for now. If so, PM me…I ,may not have much but I do have three extra compressors and I know they are good. I can send you one for freight charge only. No other cost to you…just keep giving me advice 😃

    Pizza Testing gone BAD!!!

I’m not sure if anyone has asked this yet…how long are your ovens on before you make your first pizza? If your brick doesn’t have a chance to preheat before popping the pizza in you will get burnt tops and raw bottoms. If you haven’t already, try preheating your oven longer before putting in...

Wings W/ out purchasing from la nova

OK…stupid questions for all of you fresh wing users…especially you goomba, considering how many you sell…are you parbaking your wings to get a lot of the grease out or just putting them in the fryer? I tried raw wings and they break down the fryer oil so quickly. I would love to do fresh wings...

Wings W/ out purchasing from la nova

Pierce precooked unbreaded is a good wing, size is bigger than average and cost is about $70 for 25 pounds. Very little shrinkage. I have been buying them from US Foods for almost a year. I did a little experiment first. I took a 5 pound bag of uncooked wings and cooked them up and lost over 50%...

    Drive-Thru slices

I hate selling slices!!! One day I would sell three or four pies worth of slices and the next day the slice pie would go to waste. I finally gave up and went with a “personal” or “mini” pizza for the same price and sales for this item have gotten huge, especially with kids. Kids would rather...

    Bad Checks

Personal checks are about 15% of my business. Most customers are trustworthy and although bounced checks are frustrating I wouldn’t stop taking checks any more than I would stop taking credit cards. There are several good companies you can use. CrossCheck, Certegy, and Heartland are just a few...

    4oz Dressing Food Cost Suprise

Rather than buy gallons of dressing and pay for four ounce souffle cups and lids and pay someone or take the time to fill them I currently use packets of dressing. While there is less dressing in each packet there is less hassle and each one only costs between 18 and 22 cents depending on what...

    Ferraro Foods

wow…I don’t exactly trust my Ferraro salesman but wow…Sorry to hear about your problems paul and GT. I will keep all of this in mind as I order from them a few times a month. I deal with US Foods and Roma as well as a couple local companies so I’m not as worried about them skipping out without...

    here it is.........

UP…I still think he may be a crackpot. Why show you a check for $180k? Also…I get checks for that amount in the mail everyday…they aren’t real…just offers that look like checks with everyone trying to get me to refinance my house. I can’t see why someone with 20 real estate properties and that...

    here it is.........

Try finding out who owns the building and see if he truly is doing something there. If he bought the building it would be on file with city hall and you have a right to ask(freedom of information act). If he hasn’t even gotten that far so far he may just be a crackpot. You mention half the menu...

    Ferraro Foods

I have had a decent experience with Ferraro. Right now in the area I am in they are the least expensive for Grande Mozzarella and on many other things like breaded chickenbreast, onion rings, 7/11 etc…they always seem to be either better in price or within pennies of Roma or US Foods.

    New marketing idea

Let me know what you all think of this or if you have tried it. I was giving blood yesterday and came up with this idea. Every time you give blood, the red cross gives you juice and a “snack” afterward to give you back a little of the zip you lost from giving up a pint. I decided to donate a...

    First cheese...now flour!!!

When I received my food order from Roma today there was a nice little letter attached letting me know that flour will now be going up also due to the ethanol/corn situation. IT seems that more farmers are planting corn and less are planting wheat so now flour will be jumping at least $1 a bag in...

    Pizza Delivery For Sale

If I was averaging only 8% profit I would have quit months ago. 20% minimum profit…35% food cost…20% payroll…25% THE REST IS MINE!

    COST PERCENTAGE

I have to agree with bodegahwy and billy. I figure the cost of a box in unless yout track both food and paper products and cleaning supplies seperately and then add the percentages together to get a “true” cost. In any event if you are doing strictly pizza you shouldn’t be much more than 25% in...

I am shutting down my pizzeria. I AM DONE!

Dave, NO offense taken from your comments. Nick, after rereading all of the posts, I did open myself up for all of the comments. STILL, I hold firm with my belief that many were very rough on fed-up and though I don’t know him I felt I had to say something in his defense. I hate seeing someone...

I am shutting down my pizzeria. I AM DONE!

Very insightful…all of you(even the vile, sarcastic ones). I said I have a high IQ…that DOES NOT translate into “I know everything”. I really could do without the sarcasm and nastiness. I am suprised at the vileness of some of the people here, especially to those that are struggling, new, and...

I am shutting down my pizzeria. I AM DONE!

OK…I’ll play the dummy here…explain something to me…a few of you are saying that proper planning, studying, learning etc etc will almost insure success and it has NOTHING to do with luck. So, when my sales dropped from about $7300 a week average to $5600 average literally overnight it was my...
