    Fountain install . . . floor drains?

    Here we are required to have an indirect drain under the ice bin of the fountain. If you can- you can attach the indirect drain with the funnel under the ice machine then run a pipe (PVC) to your closest drain. Sounds like alot of work but you can’t put a price on not chopping up your floor.

    Dough Prep Table?

    I have Corian on my Marsal. It’s great, I have never seen a pizza made on a Metal table. Not saying you can’t or shouldn’t. Here in NY I see marble. Marble isn’t NSF approved so just like granite I’d stay away. Corian is approved.

    $2.30 loaf. Indie are you buying shredded?.. I believe shredded has a $.30 difference around here. try the ricotta and fresh mozz. Both very good.

    I use a 12,16, and 20oz ( small med large ). In my honest opinion foam looks as cheap as it is. Have you priced paper cups? Anything cold goes in them well.     Lettuce Woes...

    Try cutting first. Submerge in water for rinse. Lift out of the water into a lettuce crisper. Spin it till it’s dry. I think the Getting the moisture out may help. Crispers are expensive but well worth it.

    Bakers pride 4 pie ovens (2). you can get 5 in each if your skilled. Max 40, maybe 50 if my oven guy keeps the door closed! I wish I was using the marsal. I hear its the best deck on the market.
