Mamma Mia! Papa John's raking in the dough online

I respect that different people want different things. However, I should note that my concept does not entail delivery. The phone calls would be a minimal amount anyway. The amount of redundancy required to ensure that an order didn’t get lost would certainly take some programming. Plus if the...

Mamma Mia! Papa John's raking in the dough online

I’m not sure if this is good or bad for the indies. They are ensuring that the customer’s order is correct (since the customer submits it), but the personal service is gone. My “concept” store isn’t competition with the big guys. I’d want a comparison of my pizza to the big guys as a comparison...

    sauces ?

Think of lasagna – it’s always better the day after it’s made. You’re using DRY spices and they have to get re-hydrated first and properly dispersed second. I believe you need to use most anything except aluminum to store the sauce due to the acidic content of the tomatoes. Make your red sauce...

How should we handle this customer?

Depending on how you want to handle it, there’s a chance that the apartment complex would allow you to put a deposit down on a remote for the gate and have a remote. That at least gets you in the gate. Otherwise, you might want to ask him if he’s turning the phone off (or leaving in another...

Managers: If you would have had this happen...(VERY LONG)

Re: Managers: If you would have had this happen…(VERY LON To effectively manage, you must be able to manage people. You clearly didn’t manage her well. I’m not saying that she’s not already unmanagable, but you seem to have more issues with her than the other managers. Also, you need to...

    Moving a 60 Hobart

Registered Guest: Well, to be fair, I’d just finished the Iron Man Triathalon in first place, so my hands were a little slick from the sweat.

    Moving a 60 Hobart

Remember that the mixer is top-heavy. If you try to lift it with a cherry picker from the bottom, you’re almost certain to have a broken mixer. I’ve heard of people using a sling and lifting it from the bottom of the top section (behind the agitator arm as far as possible). I’d think you’d want...

    Quantities for new store?

PIZZAMAGOO: 100/day was not a recommendation. That was just a round number for the explanation of why you need more than one day’s worth. That’s what I meant by “So, let’s use round numbers of 100 dough boxes per day.” There is no recommendation I can make without sales projections, which is...

Another Pizza place copied my menu design!!!!!

Are any of the graphics custom-made for you? If so, did they use any of them? That’s copyright infringement.

    spiral mixers

I believe you can make much smaller percentages of dough in a spiral than a planetary as well. For instance, if your max capacity is 50 pounds of flour, you can drop that down to about 1/3 (I think) and still get good mixing out of a planetary. You can go much lower in a spiral.

    Quantities for new store?

What are your sales projections for 16, 14, and 12 pizzas? What is your dough management going to entail? If memory serves, a typical hand-tossed crust is going to require 1 tray for every 6 16", 8 14" and 12 12". If you’re planning to hold the dough for a day, you need twice as many boxes as...

Thinking about a new concept for my area...any thoughts?

Homer Foamer: Contact SCORE and see what they can tell you. You might want to hit up the bank pre-maturely and get a gut feeling from them. You don’t have to do gourmet pizza. Even a decent pizza will work, just not discount pizza. Buffet pizza is typically low-cost for a reason – skimping on...

    pizza and a movie

From a purely business perspective, I’d think having a “red box” or similar movie machine in your store would be better than a promotion with the video store. This way, the customers could get a movie AND a pizza in your shop. If you’re not familiar with “red box”, it’s a DVD vending machine for...

    60 Qt Mixer Question

If by “attachment hub”, you’re referring to the “head unit” area (which is what I think you are referring to). Obviously, there is supposed to be some lubrication there. Is it grease you’re seeing or oil? Have you ever used an attachment there before? It could be that it’s packed like that from...

Thinking about a new concept for my area...any thoughts?

I assume there are extra restrictions on brewing your own beer for sale than just tapping into the kegs from suppliers. I’d check into those requirements. Also, “hand crafted beer” may bring $4 a pint in your area, but that’s a premium price for a premium beverage. Pizza buffets are not premium...

stopping delivery and offering great C/O deal

royster13: One of our local chains “Mr. Jims” suggests exactly that. Find a spot where you can have the business that’s in the center of high-density housing (doesn’t mean apartments, just not rural) and open up shop. I can see this working in some areas but not working in others (those with...

stopping delivery and offering great C/O deal

I know this doesn’t exactly help you, but it’s been an issue I’ve considered in the reverse. Should I ever open a place, I’d start with dine-in or carry-out only. I’d ONLY add delivery if I had to. I want to find those two idiots that started delivery and strangle them.

    Do toppings/sauce affect dough performance?

For the lighter colored sauce pies, have you thought of a garlic sauce brushing on the exposed edges? Is the bottom browning similarly between the pies or is the bottom also significantly lighter? The butter on the edge will help with browning the edges.

    Rotoflex Ovens

I recently got to see a Fish oven that wasn’t built into a wall. Man, those things are HUGE. They also didn’t use the oven as I “expected” them to. They simply used one shelf until it got full, then moved to the next shelf. I had assumed that this thing pretty much revolved all the time, but...
