    could you answer this to me if i open the bases say at 3.30pm and put them on the racks and say i had 4 racks ready.i find when its been on the racks for 3 to 4 hours before use it is dry and there fore i have problems with the bake. uncooked bases is this possible or am i finding a new reason...

    Thanks George i adj. the temp to 260c and time 5m40sec but still erratic. i had the gas people check the pressure from the street to my meter while the oven was on and they said it was spot on. as you said erratic thermostat possibly is ther anything else that would cause the base to come out...

    last night as it was getting buisy and the oven was full the pizzas suddenly came out pale then some cooked as the pizzas were coming out one is good the one next to it no good . i stopped putting them in for a minute and it started to get better. is it he oven or gas pressure i still dont know...

    my question is if i opened the pizza bases at 3pm and left them on the rack and used the first rack at say 5pm and so forth that is the second rack around 6pm will that affect the quality of the pizza?
