    Oven Trouble

there is a baffle up in the finger that is used to balance the airflow between the back side of the oven and the side nearest the door, I can’t lay my hands on my manual right now. I think Lincoln has these manuals available online. They are basically a tab up in there that is tweaked to direct...

    Strange large tipper

Last Wednesday one of our drivers called and told me he needed to talk to me after his first run. He had a $13.00 order and the girl, about 12 years old, handed him a $50.00 and said keep the change. He told her it was a fifty and that would be a $37.00 tip and she said she knew and to have a...

Square or similar mobile card processing

I am very tired of punching in card #'s all night long for delivery orders and paying crazy fees. I was thinking about getting a square reader for each driver but I have some questions. Do you provide the cell phone or use the drivers phone? Can the driver edit the transaction (add tip) after he...

    Credit card tips distribution

We split counter tips at the end of shift among employees in the kitchen. We are a del/co and our cooks handle counter. If a kitchen worker helps run deliveries that night they traditionally don’t expect a share of the tip jar. That rule is theirs not mine, but I agree with it.

    Home town politics

I was told once, several years ago, that in order for me to keep the concession stand business I would have to do two thing, match LC. prices as I was $0.50 a pie higher in price for schools and non profits , and purchase a full page Ad in the football program. ( I dropped my ad from full page...

Time for a new prep table

Yeah, my Avantco 2 door drink cooler works great except the thermostat died 14 months into a 12 month warranty.

Time for a new prep table

Our equipment is aging as fast as we are. Our True prep table is 19 years old and has already had 3 service calls this year and now has another problem. I think it’s time has come. We plan to retire in 4 to 5 years, so I am am looking at budget tables since it won’t matter to me if the thing...

What technology/app would make your life "easier" as a pizza operator?

    Cell phone batteries wouldn’t last.

    Cross marketing

I have always refused this type of thing. In my opinion, by promoting their business on your boxes you are tied to them. If they start treating customers badly (or are even perceived to be) some people may link that to you.

What is your policy on call ins?

Do you have a document for this that you would be willing to share? This sounds like a good idea and I would like to copy it in hopes of addressing some issues which have become more common lately.

Pizza Delivery Tip Of The Day

When delivering to a poorly lit Juke joint bar on a very bright sunny afternoon, always pause for a moment to allow your eyes to adjust to the dim lighting. Today I delivered to such a bar, there were about four people sitting at the bar and I set the pizza bag down on the bar in the empty space...

    flooring

Are you talking about kitchen or customer areas. For kitchen, if I had to do a new install I would investigate epoxy coating. We currently have VCT tile. Our VCT in the kitchen has lasted over 17 years, but does not look good except for the first week or so after a waxing, it just looks old but...

    AC and the lease.

Bodegahwy is correct that we had no professional advice when getting into this thing, we were just chasing a dream of owning our own business and never had a clue about how much we didn’t know. It is amazing that aftet 15 years there is still so much we don’t lnow but at least now I am aware...

    AC and the lease.

I had no foresight on this at all, we just spent about $25k on a remodel so I would be holding a weak hand in that bluff. We have been a decent tenant for 15 years but if i were in his shoes that would not be enough to make me pick up that liability. We are basically coasting the next 5 or 6...

    AC and the lease.

Our lease is up for renewal and the landlord just sent us a proposal to basically extend the current lease with a modest increase in rent. Our last renewal we were able to keep the rent the same because we were down in sales a bit, I am not happy with, but expect to pay this increase. My...

    bakers pride help

I don’t have experience with Bakers Pride, but I did convert my Lincoln double stack from propane to natural gas, some of what I saw may be applicable. I had to change an orifice on both the main burner and the pilot. I replaced springs in the pressure regulator and had to adjust gas pressure to...

    Fan Choice Awards

I just got a notification on Facebook that we have been nominated for a Fans Choice Award in the Pizza Shop category. It appears to me that this is just to try and drive traffic to their site. They also mention marketing tools available. It looks and feels like a marketing firm. My first...

    Lettuce Shortage?

Is this just a regional thing or is everyone feeling it? My normal source has iceberg available at over $60.00 per case, just under $70.00 for the cleaned and trimmed variety. For over a week we have been buying it at local grocery stores for a little more reasonable pricing. Today, 3 grocery...
