    Portion cheese on pizza's

Just my two cents here. Cups are better than nothing, but we have found them to be inconsistent due to the cheese being warmer or colder or more or less compacted. We buy feather shredded whole milk mozz in 30 pound cases, 6 bags 5 pounds each, the bags on the bottom of the case are always more...

    Reviews.... ahhhh.... but, well... hmmm

I keep looking for a profitable business to get into that does not require customers or employees, until I find it I have to get along with the customers and employees I can find.

    Hobart H600 Hook Doesn't Fit. I'm lost.

I have an H-600. I don’t have any decent measuring devices here, but using a yardstick the hole in the hook is slightly over 1.5 inches. Probably about 1-5/8". I don’t know how old my mixer is, but it has a Pizza Hut caution sticker from 1988.

Obviously the best ovens for you would be the double stack of Lincolns I have sitting in my workshop.

Frozen Premade Pizza Dough vs Fresh - cost difference?

There is pizza joint over in the next county that has great reviews, been a fixture in the community for decades and either wins or gets mentioned as best pizza in all of the “Best of” lists done by the newspapers. My wife went there last fall and noticed the crust was not spectacular in our...

I have not tried this myself, we use a prepared product, but GotRocks put a recipe here that only requires putting parm and cream on the pizza skin http://thinktank.pmq.com/threads/alfredo-sauce-from-scratch-baked.17089/

Pizza scale, reliable, accurate reasonably priced?

After almost 20 years my Pelouze PS10FXP has suffered a fatal blow. I searched around a little and did not see that scale but found comparable ones in the $500.00 to $600.00 range. We also have a Yamato scale which is much less expensive but it is slow to respond and also takes a couple of...

    Deli meats

That is weird, because none of my refrigerated table have any interior lighting and it is not an issue, inspectors are sometimes fun. If you have someone that is handy with electrical you could install a micro-switch to turn the light on when the door is opened like a cooler with a solid door...

    Propane vs Nat Gas

When we started out we had propane. Propane is priced like gasoline, meaning that the retailer sets a price and it varies from day to day depending on market conditions and how the price of tea is in China. Where it varies from gasoline pricing model is that the price is not shown anywhere so...

    advice and opinion needed, plz!

That’s asking a lot. My older son tells me I would attract higher quality employees if we had a higher starting pay but I have found you get the same people, although when I do get one that shows signs of being decent we keep bumping pay as long as they keep improving.

Digital Menu Boards... anyone using ChromeCast?

You were correct, I scanned the menu and put it on the TV at home (55") It was difficult to read because the type was too small, but the good news is the process of getting it displayed was so easy, now all I have to do is get the jpeg or PDF files made and have it done in such a way as that I...

Digital Menu Boards... anyone using ChromeCast?

. nothing like reviving an old thread but…anyways… This sounds entirely too simple. Is this a simple as making a high resolution scan of my existing beautiful paper menu, do a little cut and paste in a photoshop type program to arrange the pages/portions of the menu, and then put the resulting...
