    I pay my managers $17 per hour. Minium wage is $11 per hour. I used to pay a salary. The biggest issue I had was when managers scheduled themselves 50 hours and only work 35 hours. Now I pay them hourly. The more they work the more they make.They average about $50,000 per year with overtime.

    Do you deliver? If you don’t, you can do self delivery. Door Dash will only charge 15% commission. Otherwise you are paying 30% commission. I use On Demand Delivery Service, which is part of Buying.com. My delivery cost is $3 to $4 per delivery. It will you a lot on 3rd party fees.

    My XLT ovens are a little over a year old and I don’t have that problem. My return air is about 3 feet from the floor and when it is blowing cold air in we have to slow the back time by 10 to 20 seconds.

    We weigh everything that goes on the pizza by the ounce. Even the thin dough we roll out to order. I tell my employees that there are only to reason to not weigh them. You either own the place or you don’t want to work here anymore.
