    pre-shredded cheese or block cheese?

    We’ve experimented at the beginning…thin/thick etc…we blend 50/50 whole milk mozz (3%) & provolone…we grind both together at once, in a large shred…its stored in buss type tubs…we weigh all the cheese that goes on the pie via a small scale…we used to be quite careful & scatter the cheese...

    I used to use a service, but @5¢ a text, it can be pricey…lol…I use a jail broken iPhone & a SMS app…I send 'em out in batches of 99…my 1st text is to thank new customers & then I thank those that ordered that day…then every 2/3 weeks I blast out a limited time offer…

    on Super Bowl Sunday, we’ll have 3 working the cut table…prolly always have 400+ various sized boxes, neatly stacked/locked…our cut table is 8’ long…couldn’t do one box at a time…

    We cut in a folded box, 2 at a time…trick is to turn the box around so the top flips down on the cut table…when landing the pie, it shouldn’t land near the top edge, giving u enuf room to cut thru…the the sides will fold out slightly to cut the 3-9 line…finish the other 2 cuts, scootch the pie...
