    tom we are using a middleby ps200 series ovens. Im not to sure if the profile is right Iv tried different setups but its not to easy getting the right information on this side of the water, we dont use any sugar in the dough , and we`re cooking for 6.30 minutes at 454 f we dont have this problem...

    the best guys to try for anyparts if you live outside the US is consolidated commercial controls. they even have a direct uk number Iv used them for year s if the dont have something they will get it , but they stock heaps of henny penny parts

    thanks guys , We`re currently useing mm 200 series, Im not finding the bake that consistant, and they are very noisy I m introducing dine in shortly and wanted wo look a somethin a bit quiter but I want to keep with conveyors as labour cost here are getting very high…
