Just need so Insight from some Pizza Pros.

Whats fishy is you don’t have a name guest. I wouldn’t help him open four stores in one town. I would help him open 4 stores in 4 towns. There allot of small towns up here that don’t have delivery in them. I have found greater success in towns of 2,000 to 3,000 than in large metropolitan areas...

    prep table portion scale

I have no idea what its name is, but I did find it in the kitchen section at Bed, Bath, & Beyond. It a little round scale with a measuring bowl, that measures in ounces & lbs or Kg. and it will tare multiple times. I’ll tell you its allot less stressful when a $9.99 scale fall of the counter on...

    Subway pizza

Yeah, I have found if you don’t eat the fires, and burger within say 5 minutes after you get it all the food dries up, and becomes hard like a cookie. However, again if your in the catering business, or you get allot of large party orders for pizza, here is another mega competitor, like frickin...

    Subway pizza

What this say to me is that the SUBWAY chain is hurting so much from the Quiznos intrusion that they need to diversify there product base to grab more of the total market-share. This is reminiscent of McDonald’s attempt to enter the Pizza market a few years ago. I wonder if Coke made the same...

    prep table portion scale

It really depend on what you wanna spend, a top of the line scale may run you $500 to $600. I currently buy a scale, I found at Bed, Bath, & Beyond for about $9.99 that work perfectly for my use. I just got tired of replacing expensive scales because of employee misuse. The $9.99 scales last...

    manual vegetable slicer?

Slice your own until you get to about 10 stores, or your store volume is above 20k a week. If your store is slow say under 10k, you have plenty of time to slice vegetables, as the store grows though you begin to move through more employees, and you will have consistency problems. I am a total...

    Staffing ideas............

I understand where you are Dave. Back in 1999 in Washington state we were booming, unemployment had dropped below 1% and the average state wage was about $45,000 a year, or about $22.50/hr. (Thanks Microsoft!) I was having a hard time finding Drivers, But not having a hard time finding Managers...

    Employee Bonus with Secret Shopper

I worked for Domino’s Pizza for 15 years and Papa John’s for 3 years befor opening my own stores. In the beginning DPI and most of there franchisee would give a manager a minimum wage salary, with benefits, and 20% of Profits. So if you had a store that was avg. $12,000/wk and you ran your...

    Little Caesars Stopping Deliveries ????

It sounds like LC doesn’t have a clue. They need to regroup with all there franchisee, and re-establish there game plan. I don’t know hot they can make any money on $5. pizzas when the CME cheese price is $2.15 a pound. Its kinda like Burger King. I had a friend that owned 13 stores in...

    Adding Drivers

First of all don’t ever let your employees RUN You! Its your business, you sign the checks, if they are not happy, show them the door. A Driver in one of my stores learns to do everything, from standard prep, product production, order-taking, dish-washing, Dining room pick-up, window cleaning...

    new mixer or used?

I would opt for a 60 qt. I have picked up three Hobarts in the last year for less than $1000 of Ebay. It is always good to have at least two mixers, one as backup. Also, I use 32 lbs bags of flour, and mix 55 lbs batches of dough, its easier on the mixer, and its easier on my back.

    hand-on or abssentee

It really depends on what your nut is. How much do you need to take home in order to live comfortably, and how much do you need to pay someone to work in a responsible role as a manager of your business. I would really suggest opening at least three stores, cause you probably can make one store...

    manual vegetable slicer?

I disagree also. I own 3 stores, and I have been in the restaurant industry about 25 years now. I have seen it all. When I worked at Harrah’s Casino & Resort, we did all the prep by hand for over 40,000 meals a day. To me its about maintaining the quality of the product, and shelf-life. Most...

    Little Caesars Stopping Deliveries ????

That is very possible, The Little Caesars in Washington State shutdown all 38 stores, in one day. Apparently they built the stores to close together, and when they made the move to expand into the delivery market, their areas weren’t big enough to support it and they loss tons of money, enough...

    Staffing ideas............

Dave when I worked for Domino’s Pizza, my delivery areas was about 4 miles wid, and about 5 miles north and 5 miles south, along a major arterial. My bonus depended on several factors one was multiple audits that were done by secret customers. If my delivery average to these customers was ever...

    New idea tonight

Sounds like you need to sell and move to a less competitive market. I have three stores that average about $5k a week and profit about $75k a year each. They are in small markets, small towns of 2000 to 3000 working class people with maybe one or two other competitors, I get $22.99 for a 16"...

Prep Table Crash - - brand to replace with

Nick, I have found several sellers on Ebay, who either get there stuff real cheap or they just don’t know how to value there items. Here is one example this seller will place an item really high, and it won’t get bids so the next time he will just throw it up at $9.99 and depending on his...

    Good electric conveyors??? Help!

Bubba: Phase converters are really inefficient, for instance it will take about 100 kilowatts single phase to produce 50 killowatts of three phase. So if your paying 10 cents a kilowatt, now your paying 20 cents a kilowatt to run your oven. I use a triple stack Lincoln Impinger 1301 electric...
