    September Slump?

September is consistently one of our slowest months, however a lot of our business comes from tourism, which gives an explanation for the downturn during this time of the year. We have really been fortunate this year - actually staying ahead of prior year sales, and so far MTD, we are 4% over...

Anyone use a Water Filter for your Ice Machine?

We do have a water filter that ties into our ice machine, coffee machine and soda fountain. We use Ecolab, and they were able to supply us with the whole shabang. Works great!

    Lobby/Dinning Area Music

Please don’t misconstrue my questioning this… I’m certainly not trying to take the side of the three licensing companies that use scare tactics, but… How can you really be sure that of all the unknown college bands that are making music… That all the songs they are presenting to you… Through...

    Lobby/Dinning Area Music

This came from a BMI FAQ that I came across… I’m going to take a closer look at all of my licenses to be sure… Am I missing something? “Q #7 – “If I hire bands playing only original music do I need a music license?†A – Most business owners have neither the time nor desire to research...

    Lobby/Dinning Area Music

Unfortunately, the music licenses actually apply to playing music in general… Not a specific artist. That is why the fact that I have live music puts my license in a different category than just CDs or satellite radio… I doesn’t matter that it’s a local artist, and I could ask them to be sure...

    Garlic Knots

Hijacking Alert!!! Nick, you mentioned pretzels, and I am really wanting to do a pretzel myself… There aren’t a whole lot of things better than a nice chewy on the inside, crunchy on the outside, hot baked pretzel with a good mustard sauce… However, we make all our own dough and breads...

scary stuff..i think this means flour prices will be rising

Re: scary stuff…i think this means flour prices will be ris I asked my vendor about what their market analysts are seeing in the future for wheat, based on the threat of the Ug99 virus, and this was their reply: Below are the comments from our “in-house” wheat analyst: "Other than the article...

    Sandwiches For Delivery

Thanks for the info! We actually have quite a few sandwiches that we do through the ovens, and they are all big sellers. What I am looking for are good sides that can go through the oven, rather than through a fryer. We currently put thick cut Kettle Chips on the sides of our sandwiches, which...

    Ideas for Chicken Wings

I imagine Panini sandwiches would be very quick and easy to pull off in your situation. Even the deli at Safeway is doing a Panini sandwich line… Basically you can have them completely pre-made, individually wrapped and refrigerated - then all you have to do is do a quick slather of butter or...

    Sandwiches For Delivery

Indie, How long do those wedges take to cook? I was interested in doing something similar, but I thought the time it would take to bake them would inhibit us… We go through ALOT of sandwiches, but we don’t have space to hold cooked wedges. I would hate to have to have a sandwich held up because...

Questions asking from an chinese Pizza store oprator!

You will probably want to reconsider your promise of delivery 20 minutes after the order is placed. Depending on how your kitchen is set up, in a really big rush, it can be a challenge to produce pizzas in under 20 minutes… Then you still have to deliver it! Also, a time-based promise...

    Info on: Sun Dried Tomatoes

We use sundried tomatoes, which come to me in a 5 lb. case (vacuum-sealed). The shelf life on them is fantastic - honestly I couldn’t put a real number to it, as we always run through the case before shelf life even becomes an issue… I am currently paying $3.52/lb. We always put the sundried...

    Scheduling Employees

I saw a pretty cool program at the NRA show in Chicago called HotSchedules. It will send out text or e-mail messages to staff alerting them to when the schedule is complete, allows them to request time off and switch shifts with other employees (which you can set to require management...

BMI Music... anyone getting these letters?

It’s no different than the license requirements for playing music over the radio… It’s just another level to it. It allows us to be very flexible with the artists we get to choose, without the liability of me having to verify their legal ability to play the songs they wish. Considering our live...

BMI Music... anyone getting these letters?

pizza2007: The problem arises when you aren’t a “nearby” business… If they are commissioned by you to play in your establishment, the liability falls on you. We have live music every weekend in the restaurant, so we have to have a different level of coverage by these companies.

BMI Music... anyone getting these letters?

There is actually a third one, as well (although a little less known), which is SESAC. Between the three (BMI, ASCAP, SESAC), they cover copyrights of SONGS as well as artists. That means that one artist could have material under copyright protection with ALL THREE of these companies! :shock...
