    Cheese prices...

Cheese is approaching an all time high even though there have been NO TRADES lately on the CME. There have only been two trades in the block market since december 13th. What a load of shite! This isn’t a supply and demand issue. This is simply price manipulation on an thinly traded exchange. But...

Opening a new pizza shop in a location with no vents...

jokergerm: We have done the same before but in many municipalities, they will require stamped architect and engineer plans…2-3k. If a contractor has 3 men on the job for two days X 75/per hour, you are looking at another 3600. If you are required to have an ansul system, you are probably adding...

Opening a new pizza shop in a location with no vents...

To get a hood professionally installed can easily run 10k plus the cost of the hood and fans. In some instances, just the roof penetration can run nearly that much. If the landlord has a 500k roof and requires you to use the original roof installer to maintain their roof warranty, you can bet it...

    Counterfeit Bills?

We go 3 or 4 months with no issues and we then get 3 or 4 counterfeit bills in one month. Sometimes 10’s sometimes 20’s, and once it was a $50. Just a cost of doing business. Still a lot cheaper than getting skalped by the credit card processing companies.

Guys with edge 60s, whats the real world savings in energy

Re: Guys with edge 60s, whats the real world savings in ener Is it worth upgrading? Would you like a quieter cooler working environment? Would you like a more consistent bake? Would you like an easier oven to clean? Would you like virtually no repairs for the next 5 years? If you answered...

Guys with edge 60s, whats the real world savings in energy

Re: Guys with edge 60s, whats the real world savings in ener Ronny: Last month we used 484 ccf’s. Our gas valves are modulating, and we don’t use split belts. We don’t ever have to adjust our cook time, however, if we bake an extra large pizza with everything on it we leave a little room behind...

Re: Guys with edge 60s, whats the real world savings in ener pizzapizza12: I think propane typically is more expensive… Maybe by a factor of 50% or more?

Guys with edge 60s, whats the real world savings in energy

Re: Guys with edge 60s, whats the real world savings in ener I have a triple stack of edge 60’s and I am open 17 hours/day, 7 Days per week. We run 1 oven 30 percent of the time, two ovens 65% of the time, and all 3 ovens 5% of the time. Ours run on natural gas and our gas bill is $450/month...

Bricker drive unit vs bricker gear box

We use a VCM. Did 600 lbs of cheese today in 30 minutes, start to finish. 24 pounds in 20 seconds! I prefer the “diced” chop that the VCM gives us vs shredded cheese. I have used the Pallazalo machine as well and it does shred fast.

Anyone use Singleplatform from Constant Contact?

Pizza of the Month: Yes, if you pay them, you can go in and make changes. How much did you have to pay to do this? We have never paid them or signed up with them, yet they have posted “their” versions of our menu on numerous search engines. These incorrect menus have pissed off quite a few...

Anyone use Singleplatform from Constant Contact?

I disagee with this company’s skumbag approach to business. It seems to go like this. We will publish your menu WITHOUT your permission on many of the most popular websites on the internet. This menu could be completely inaccurate. It could have dozens of mistakes. It could be someone elses menu...

    Dough balling machine?

You can not hand roll dough balls as tight as the r-900 rolls them. They are consistent, the machine is fast, and your fore arms will thank you. However, if you do less than 100 pounds of dough most days, the clean up may negate the time savings of the machine. It takes close to 15 minutes to...

    Ovens

I have used nearly every oven out there it the last 27 years and the three I would consider for a operation with average to above average would be Middleby Marshall, Bofi Xlt, and Edge. Middleby’s have been around forever, perform great, can be serviced by most commercial appliance repair...

    Tip Jar

I am not a big fan of a tip jar. I reluctantly allowed my employees to put a cup on the front counter with a few pens in it for signing credit card slips. Quite a few people put a tip in it. Especially after one of the employees seeds it with a dollar or two. My main rule is it can’t say tip...

    Cordless LED Car Toppers

We tried them a while back and felt they were not quite as bright. Also, they didn’t last for our 10 hour shifts. After 7 hours or so the light became dimmer, much like a flashlight with batteries that are dying.

    Bad night.

In the scorecard that is far more important than your P&L, chalk one up for you and your driver. No need for publicity for doing the right thing. Thank God you guys were there to keep the little one safe.

    Sales Increase

February 2013 was up 4% for us over february 2012. It would have been more but there was 29 day in 2012 and only 28 days in 2013.
