    Shredding Cheese

bodegahwy: Really, that’s awesome. It takes me about 10 minutes to do 20#s of cheese on my Pelican head. When I get up to the volume you do, I’ll have to seriously take a look at a VCM. Cheezy Tomato: They do have standalone cheese shredders. I found this one on Ebay…...

    Changing Soda Companies…

Integraoligist: Have you increased your cup and bottle prices? My pepsi bibs went up 10 percent, so I increased my prices 10 percent. No one griped. I agree with the previous posters that brand is very important. Even though I serve Pepsi and some people only like Coke, it’s an image thing...

    Weighing out cheese?

npizza: That’s a good idea. I may have to give that one a try. Thanks

    keeping mushrooms fresh

Mushrooms have to breathe. Be sure to keep them in a well ventilated and dry area of your fridge. Be sure not to cover them with plastic wrap.

just ordered our New Loyalty Program cards

Nick, Maybe you can get some cool little stickers made that will fit over the little octagons. Then you can send out stickers with the deliveries and let the customer put them on their cards. I would recommend that you DO include delivery customers. As you know, some of your best customers have...

    Weighing out cheese?

That does look nice. I like the touchless feature to tare the scale. My scale has a foot pedal, but it always got in the way so we don’t even use it.

    Competition is a funny thing...

steveo922: Here’s what I would do… Go to the haircutter and ask if she wouldn’t mind letting you put your menus on her counter as well. Don’t ask her to get rid of the other pizza place. Then let her know that you would be more than happy to put her flyers on your counter. And be sure to tell...

    Peanut butter? Anyone?

xpk: Wow, that’s just about one of the strangest pizza recipes I’ve ever seen. May have to give it a try…

    another senseless killing

paul7979: Just for the record, I’m not an anti-gun freak. In fact, I’m just the opposite. I just don’t know if I would want my drivers packing while making deliveries. I’ve always told my employees, “If you’re ever held up, give them what they want. Don’t resist. Whatever they want is not worth...

Do you have block pricing? Who is the vendor?

bodegahwy: I posted a similar thread about a month ago on this. After hearing that others were doing “block plus”, I inquired with my supplier to see what it would take to get on a similar program. Last Friday, my rep got back to me and they agreed to do “block + 10 cents”. I thought she was...

    another senseless killing

What a senseless tragedy. I truly feel for his family. As an operator, I have informed my drivers to always be aware of things around them. But when I see news like this, I question if I’m doing enough. I’m sure this guy wasn’t doing anything wrong. He was an innocent victim that probably had...

    In addition to pizza....

After cooking to al dente, we quickly cool under cold water and drain. Then we toss in olive oil and bag up single portions, using clear plastic food bags (I get mine from restockit.com, but you can get them from pretty much anywhere). As for sauce, I cheat . I use red sauce from Stanilaus...

Why the rubber or vinyl glove over it? Is that for better sanitation?

    Oven Trouble

I personally would call an authorized repair tech. What happens if it stops kicking on after several starts? Could you afford to not have your oven working? To me, that would be scary.

    Injury-proned employee

I have a young lady on my staff that has cut herself 4 times since she’s worked for me (1 1/2 years). I’m fairly positive that all of the cuts were accidents and she’s not looking for a free ride on my workman’s comp policy. She’s a good employee; I just think she’s a bad user of sharp objects...

    Weighing out cheese?

Daddio: Not that I don’t trust my pizza makers, but I just don’t think that they’ll always weigh out the proper amount of cheese if they do it per order. I do not have a bin of throw cheese anywhere on my line, so my pizza makers are forced to use the pre-portioned cheese. I think it was Big...

    Weighing out cheese?

Pre-portioning does take extra time, but I think it’s well worth it. An ounce here, an ounce there, it all adds up. I am a big believer of pre-portioning. Now to your question… All I can say is “I wish”. I have often thought about some kind of machine that could take a heap of grated cheese and...

Fridge magnets....we never use them in the UK. Should we?

Re: Fridge magnets…we never use them in the UK. Should we billsams, Be the first! Set the trend. Abeit small, it’s a differentiator and like it was discussed in the other thread, you need them to compete. Maybe it’s the key that will unlock your potential. You can brag that you were the first...

    Portable signs

Interesting… If you’ve got a good place to put it, seems like it would definately catch an eye. Are they only renting them? No way to buy them outright? The rental fees seem kind of high ($350-$375C per month). It seems like it would be more cost effective to have a sign made on MDO plywood and...

    In addition to pizza....

Hi George, (Happy B-Day BTW) I purchased a tabletop pasta cooker from Nemco (about $750 new). We pre-cook the pasta, cool and then bag. We offer Baked Spaghetti, Baked Ziti (rigatoni noodles mixed with sauce, sausage, and cheeses), Pasta Primavera (egg noodles, veggies, alfredo sauce, optional...
