    What would you have done?

The customer was totally out of line, of course - but if you stick to your guns you lose a more or less good customer. I’d do what you did, but make a note of his name. Once is an accident, twice is not.

    Seating Solutions/Pagers

We recently went to pagers as opposed to calling out numbers when the order is ready. Works really nice, but it’s just creepy how quiet it is -(even when we’re packed)- without the number yelling.

Keeping Pizza Ovens On All Night?

Conveyor ovens, turn 'em off. Deck ovens, leave them on - if you cook on the stone, it keeps them clean, too.

how many shifts are you the cook?

It’s the oompa loopas for me, I never work unless someone calls in sick, and even then someone else is usually willing to cover the shift. You do this for 25 years and eventually you work all the bugs out of the system.

Smallest dough batch out of your 80qt mixer?

I don’t recall which hook I used - I’ve used both, over the years. But the dough came out totally normal.

Smallest dough batch out of your 80qt mixer?

The smallest batch I ever mixed was twelve and a half pounds of flour. (Cut it a little close that week)

What is the average Utilities Cost %

One of the “tests” the IRS uses to determine contractor vs employee, is whether the person in question works for more than one employer. If you are the only one having him deliver for you, he’s an employee.

    selling the business questions

Your buyer is not “entitled” to anything, including recipes, unless it is spelled out in the purchase agreement. That said, your buyer would be the biggest idiot in the world not to demand the recipes as part of the deal - unless he has plans that do not need your recipes to work. As for your...

wanted to share this resume that i got today

It’s funny/sad to read, of course, but at least this is an honest resume. It tells you something about the person that wrote it, and isn’t that the point? Competently/professionally written resumes, spell-checked and proof-read, can be generated by any idiot with minimal computer skills - but...

    Help with Capsule Pak Walk-in

I can’t speak to walk-ins in general, as mine is the only one I have experience with, but mine has a drain line for the condensation water.

    Re-Thinking Delivery Charges

I don’t “have a dog in this fight”, since I don’t deliver, but you just have to accept that you will get “difficult” customers no matter what you do. You can’t let the dumb****es dictate how you run your business.

    adding beer and wine

Cons: licenses, rules, new dishwashing issues, bigger refrigeration needs, Drunks, minors, & minor employees. . Pros: You can’t really say you are a sit down Pizza Joint without at least Beer.

anyone using an electric deck oven

I used to use Electric deck ovens, but went to gas. The major difference between the two is when they break. Fixing a gas oven is cheap, simple and usually DIY - but if your elements burn out on an electric deck it is neither cheap nor is it a DIY.

    I am leaving Think Tank

I’ve spent the last two days reading most of gregster’s posts of the last year. I found nothing remarkable, nor objectionable. He does post from the “drivers” POV, and often. But what of it? That being said, being a Mod is tuff.

    Aggrevated....

While this is technically stealing, it is entirely possible she doesn’t see it that way. If the unauthorized use of “office supplies” is the biggest pilferage problem you have, count your blessings.

Requiring signatures for credit card transactions

royster13: . . . We get one or two people per week that ASK if they can pay over the phone, but we have never had anyone cancel the order because they couldn’t. (We don’t deliver, btw.)

Requiring signatures for credit card transactions

Registered Guest: . . . . Customers thank us for checking ID, because (I assume) it shows we actually CARE about illegal credit cards usage. And while it may be true that they have zero liability for the misuse of their card, they do have 100% of the hassle in dealing with it. We also...

Requiring signatures for credit card transactions

We always require the signature, period. We also always require ID proving that it is actually YOUR card. We also are THANKED regularly for doing so by customers. If VISA wants to hassle us about requiring ID, we are prepared to stop accepting Credit cards.
