Why Restaurants Fail by Robert Irving

It’s always good to remember the old saying: There are three kinds of lies: Lies, darned lies, and statistics.

    Staff messing up orders!

You can’t replace that kind of employee! So I’m thinking you need to find a way to have someone else check her “accuracy” in making orders. If she gets insulted by your “lack of trust in her” , oh well, you tried…

    Staff messing up orders!

Legally, you CAN’T make the employee pay for it! (I know people do that, but it’s still illegal) But beyond that: I don’t quite understand the mistake…If the order has extra, unordered, unpaid for stuff included in it, you have to decide how that happened. Was it deliberate - that’s just theft...

    Gluten Free Pizza

Nice rant! One out of every 133 people is .75%, which is 25% off of 1%. And the “fad” comments are based on the fact that the percentage of people who think they need gluten-free is MUCH higher than .75%. Those people are a “fad”, and will go away. Obviously, people like your son, who ARE part...

    How do you handle donations?

We give only give out gift certs for $25 (about a Giant Combo). If they are current customers I don’t mind, and if they are not, I like it even more! (The best advertising is for a non-customer to try our pizza) And if the Cert doesn’t come back, it doesn’t cost us anything. I suppose I should...

    Should I buy this pizzeria?

Wow, where to start? The problem with not claiming all your biz income, other than the illegality of it, is you have no proof of that income if you want to sell. So, in your case, you have to take his word on his real gross income. 5500 a week times 52 weeks is 286k per year, which is close to...

A no brainer but a few questions need answering

Rather then try to make pizza with fake meat, tofu, tofurkey, etc.: Why not just make good vegi pizzas? It’s not something we do, but there are many possible vegi pizzas…as long as they allow cheese.

    Acceptable amount of mistakes?

Without disagreeing with anything GotRocks said: If you never make mistakes, you aren’t busy enough. If your staff is operating on that thin edge of “We can do this”, then there will inevitably be whispers of “Oops”.

    Raising Prices While Increasing Sales

Since most $5 pizzas are mostly dough, with not much on them, this occurred to me: (Of course you have to promote it). Double the amount of cheese, double the amount of pepperoni, etc., but DON’T double the price. Make the new price something like $7.50. Same ingredients, higher price, and...

    Switching from a 16" large to a 14"??

I’ve run into this idea before. And here’s the problem: If the customer is concerned about price, he sees that he is paying the same price for less pizza. And if the customer is NOT concerned about the price; when he orders a “large”, he is not getting the amount of pizza he expected. I’d just...

Try to be courteous & nice

Irritating? Yes. Important? No. The only way this will hurt you, is if lots of your customers start doing this, which won’t happen unless your prices are just totally out of line. (too much hassle for 95% of the people)… Ignore it and be nice.

    Looking for Ex-Pizzeria Operators

That’s funny. I was just thinking that I wish you guys would do follow-up stories on some of the “interesting” concepts you have featured over the years. Mainly, how many are still in business five years later? Also, these lists of big chains that say “Increase in no. of units last year = 26”...

    Counterfeit Bills?

Most biz around here won’t even accept $100 bills. After I got my first fake one, I didn’t go that far, but now we won’t accept $100’s without writing down number of the bill, plus name and Drivers License number of customer presenting it. ( A well-known customer we just write name only). We...
