    Deck oven door problem!

I’ve got the same problem - there is a spring that partially supports the doors - it encourages the doors to shut. Unfortunately, in my oven at least, that spring is hidden in an inaccessable spot. (Inside the left-hand side of the oven) when they break, the door is as you say - lotsa dead...

    The day has arrived....

You can set up a conveyor to cook any pizza, but the problem is: Are your pizzas all the same? The only way you can cook a combo and a cheese pizza in the same conveyor is if the combo has no more stuff on it then the cheese (more kinds of stuff, sure, but not more total amount of stuff). This...

    Coupon/Specials

Like Rockstar said. Why? If someone comes in because of a coupon, is it smart to send him back out the door, just cause he’s a day late? Instead, take the oportunity to make him feel “special”: “Oh, that expired two days ago, but I’ll (look around furtively) honor it anyway.”

any opinions on pizza prep and other refrigeration?

I’ve bought new equipment, on the theory that new equals good equals reliable. HAH. New equipment these days is preplanned to break, so you will have to fix/replace it - resulting in more money for the manufacturers. Hobart is a great name for glasswashers, right? I had an old one that lasted-...

    Recommendation for Pizza Stands

Well, that’s gonna happen no matter what you do - clumsy people and little kids will always succeed in making a mess. How about some sort of clamp to hold the pan on, no matter what?

    stupid insurance company!!!!!!!

Why is “customer service” and overall competance so lacking? Why does it seem that no one cares, and everyone is just “putting in their time”? In a word, it’s called Big Business. (ok, two words). The further the actual worker is from the actual boss, the more powerless that worker feels, and...

    Bakers Pride Y-600

I tried that “platform in front of the oven” thing, it went away after the first person - with a pizza in each hand - tripped over it and went, literally, head-first into the open oven. OMG. She was a tough little psychopath, worked the rest of her shift.

Record Keeping -- Saving Signed CC Receipts

Realistically, you only need to keep them until you are sure there will be no “fuss” about the charge. I never get “chargebacks”, so I keep them for only one month. Dispose of them carefully!!! Many times they have the CC number, name and signature of customer on them - a dangerous combination.

    help with cleaning rags

Wash them like any other white fabric.(In a washing machine) We use Tide, and bleach of course. Give 'em a shot of “blueing” every once and a while, and they stay nice and white…until they dissolve from the bleach. But even then they are still white!!

Unhappy customer resolution . . . how far would/do you go?

My question is: What would you expect your service staff to do in that situation? Would you make any sort of offer to resolve the customer unhappiness? What sorts of things are in your general practices? Would you offer to replace food with something else or refund the meal? What would be too...

"Special" sauce ingredients? disclose or not

I don’t think anyone has a ‘duty’ to disclose the ingredients of their sauce. But, that being said, if someone finds their food inedible for ANY REASON, only a fool would let them leave without giving them both their money back and a SINCERE apology. It’s one thing to have someone not like your...

Registered Guest: . . I think youre mistaken. Is there a lawyer in the Forum?

who do you hold responsible when a table dines & dashes?

Rockstar pizza: . . .Not only is that illegal, as you said, but it is ALSO ILLEGAL to deduct from an employee’s check: theft by THAT EMPLOYEE. You can have them arrested, or fire them, but you can’t take that money out of their check without their permission.

How do you cut your pizza?

The Fat Boy: . . . Gotta cut it on a board, and then slide. I took a large plastic cutting board and whittled it into the shape I wanted.

How do you cut your pizza?

I’ve used both: which is better depends on what your pizza is like. If your pizza tends to have lotsa layers, like bacon, peperoni, and salami, then a knife is best, as a roller will destroy the pizza. But if you don’t have lotsa flat meats, like an olive, onion, and sausage pizza, than a roller...

    Deck ovens burning pizza bottoms

Try dropping your temp 25-50 degrees when it’s slow, but don’t forget to turn it back up for busy times.

OH NO! Someone else thinks pizza is the way to big $$$

I’m not motivated enough to try to match Fat Boy’s response, but I’ll chime in on a couple of the subjects: As Fat Boy said on family members as partners - basically NO! The reason is: Who is the Boss? There can be only one. It’s a good way to tear a family apart. And how to get good, dependable...
