    I don’t worry about cleaning mine because they come out of a 500 degree oven! Does anyone clean screens? (other than knocking off burned cheese etc if it gets on there?) We use parchment for wings but pretty much anything else just rides the screen through the oven.

    Interesting thought process. My inclination would be to look for a location where there are a lot of restaurants nearby that seem to be doing well. The logic is that I want a big pie to carve a slice out of and I am willing to compete to get it.
