Well guys, after 20+ plus years in the business and 7 years of owning my own place, I am out! The wife got a huge promotion and I sold my shop. We packed up, sold the house in the Chicago burbs and moved to Sacramento California! Talk about an adventure! Anyone in the tank in the area? we are...

Customers making their own pizza day

there are great kids meals like this…bring the stretched out dough with sauce in it to the table and have the customer put the ingredients they want from ramekins. the kids and fam have a blast doing it themselves. everything is pre portioned and ready to go the customers just dump it on. them...

I print labels off of my home printer and bring them into the shop. You can get a good deal on bulk sheets of labels from Uline. The ink gets expensive tho. I know this isn’t what you are asking, it’s just how i do it 🙂

I can see being obsessed with a lot of things…stamp collecting, exercising, model trains, tango…but Papa John’s pizza is just not one of them. But good on the guy for having a hobby, that’s more than I can say for myself.

    Cookie dough

@smiling with hope Walter, you have the right idea! cookie dough is easy to make and freezes well. I’m sure they are way better than anything from the distributors. I just don’t have the time…maybe one day when I have a smaller menu.

    Cookie dough

I can totally taste the chemicals in david’s cookies! Thanks for bringing this up. They are very artificial tasting. If your depot doesn’t stock them ask the guys in the office to look into it. They are usually open to new products. I have 2 in my area, one stocks them and one does not.

    Peppers on a pizza

two words…PANKO BREADCRUMBS. they suck up moisture and do not add anything taste or texture wise. just a sprinkling on the layer with the veggies does the trick. I didn’t believe it at first until I tried it.

    Delivery Menu Items?

the best part of owning your own business is that you get to set the rules. Case in point, I will not deliver slices. people ask all the time, no matter how big the order, we won’t do it. Our computers are not set up to deliver slices (they don’t print on the kitchen slips) and because of that I...

    Impact of high cogs

oh man Chipotle is getting ridiculous…my fat ass has to get double meat and guac so i’m looking at $15 for a bowl… but they are the only fast food place around that has smi clean ingredients.
