I am considering getting a warming cabinet. my concern is does it change the pizza. for instance, if you have pizza in a hot bag for more than 15 minutes they get soggy. or if the temp of the cabinet is to high it will continue cooking the pizza. currently I just have a bunch of sheet pan grates...
