    Employees....

Wow… very interesting. I bet your town has a McDonalds in it and I bet it has plenty of minimum wage employees that work hard, and their not getting marbles, movie tickets or pats on the head everytime they sweep the floor. You have to be constantly recruiting, always hiring and firing. This...

Cultural lessons to be learned from Domino's

Having worked on the corporate side of a franchisor… I can understand Domino’s position. Lets face it 8 of 10 small businesses fail, and a pizza franchise is a small business. Some franchisees think all they have to do is open the doors and invest the money and BANG! The store will be...

    Scanning Invoices/Paperwork

Scanning is not a problem, the standard is that it must be produced on request. However, I wouldn’t discard any of the original paper, just store offsite. Also, you have to keep the actual signed I-9s and they must be stored apart from the rest of the file.

Should I open a Pizza Shop?

Roger: Dominos used to have just as many or more units than PH, they have slowed the growth substantially. The guy at the top is a banker not a pizza guy. Just my .02. Dominos has many, many dedicated and hard working franchisees who love their operations. I just am not a fan of the product.

    Shop Valuations in 2008

there is a LOT of crap out there… business brokers for the most part are trying to sell the business for the highest possible price an most of them don’t know anything about valuations. Most would be hard pressed for comparables. I don’t trust most of them. A good rule of thumb is 3-5x earnings...

Should I open a Pizza Shop?

Nick is right… loving to cook won’t make you a success in the restaurant biz… you will make you a success… Loving to cook is just a big benefit. There is no magic bullet on what kind of restaurant to open, what does your market want to eat? You may open a pizza shop and become a burger joint in...

    Financing Help

I would worry less about liquidity than if the new store is going to be successful with just 30k investment. Whatever “loan” you get you’re going to have to secure it. Your home is going to be the best and most “liquid” for your bank to use as security, which will give you the lowest cost of...

    Financing Help

Your making 500k in sales and you don’t have 30k, or can’t get it from your bank? Do you have a house? Home Equity Line is very cheap and you should be able to pay it back quickly. If you borrow it… its your money too… Borrow from yourself

    Average Ticket

Ditto to what Nick is saying… Its a good tool to figure out whats going on and what the trends are. If your’s are low… it maybe because of your market or something else, use the tool to figure out whats going on. You should talk to your competitors… make friends… you’d be suprised how many of...

    Average Ticket

I chop up my average ticket by day of the week, month, hour of the day, delivery/carryout, anyway I can to try to spot trends. My goal is year over year increase of my average ticket of 10-12% over inflation. Upselling is key, but if your menu or food cost is out of control your avg ticket...

    Average Ticket

Yea… I thought that was quite low for delivery… ours is low because we sell by the slice, but if I took out the slices we’re at $21… Thanks all

    Average Ticket

With coupons and discounts, what are most people seeing as an Average Ticket? Some told me $13 is a good avg ticket, is that true?
