I use a spreadsheet to figure out cost of menu items including dough. There are some you can get for free online. My current cost for a 9.5oz dough ball is 21 cents.
Here are my top sellers:
Mild
Honey BBQ
Hot
Roasted Garlic Butter
Sweet Thai Chili
Spicy BBQ
We make our own mild and hot sauce. We get 9 other flavors including the ones listed above from Buffalo Gills in Baltimore MD. They ship orders that same day. $16-$19 per gallon
I got lucky when I was introduced to the Veroforno Deck Oven! I have one of only a handful in the world. I wouldn’t give it up for anything. No hot spots…no turning…always the same baking time. I wish they still made them so I could recommend one to you.
I sell about $4,000 a week in fried foods. I used to have an Autofry but I kept getting behind so I upgraded to a hood/ansul system with two gas vat fryers. Now I can keep up with anything. It is not unheard of for us to do $1,000+ on a busy day. Super Bowl wings sales…no problem!

I had a Taylor machine. Worst investment, BY FAR, that I have ever made. I sold it used at a loss of over $15,000. How many pizzerias sell frozen drinks? Not very many because it just does not fit the concept. We got “sold” by a slick salesman.
Why not sell fresh cut fries? I get 35# finished product out of every 50# case. Your food cost would go down and they taste sooooo much better. We sell 12oz. for 2.29 and 20oz. for 3.79. I order 300#-350# per week at a price of 19.90 per case currently. The price is usually 14.00-15.00 per case...
We use a vanilla icing box mix (made for cakes) and just add more water to make the icing. The icing is stored in soufflé cups and can be drizzled on by the customer.
