    indie pizza: Yeah, 15 to 20 % seems steep. Maybe if it’s a full blown restaurant, but probably not needed for just a pizza shop. 10% is probably doable unless you have an extravagant lifestyle.

    Beer/wine

    We’re doing beer in our next place, but questioning wine. Ladies probably want it in glass so that means glads and no plastic, dish-washing, breakage, etc. Customers are actually saying that beer would be enough, so they’re helping to decide.

    What type of employee do you prefer?

    We’ve had luck hiring people with restaurant experience (not necessarily pizza) or at least some retail experience. If they stick, they quickly pick up the pizza making/kitchen tasks. We haven’t had luck with people that aren’t service oriented or into cleanliness.

    question about service/need to vent.

    Customers don’t want burnt pizza. Good call. It also sounds like the other guy is tired of having to cover for the kitchen and mistakes or for mistakes with the initial orders. Sounds like staff meeting time… Putting out a burnt pizza is stupid though.

    Just stopped taking checks

    So are you guys taking checks because of delivery or do people write them at the store? Just curious. We don’t deliver so we’ve only taken check cards and credit cards. It’s a lot easier having the computer keeping track of sales versus storing and dealing with checks.
