    vegan pizza

bouldercreekpizza: LOVE love love Teese Cheese out of Chicago Soy Dairy. It tastes really good, looks a bit odd when melted (stays really white) but the flavor is worth it. I prefer it over Daiya (sp?). It is completely dairy free and vegan. The cost is about the same as our regular...

    Pizza Expo 2012

I’ll be attending the Pizza Expo in Vegas again this year, and hope I get more out of it from last year. This year, I’ve created an entire itinerary of workshops that I want to attend and speakers that are a “can’t miss”. The only thing I need to fit in is eating. It’s not like there are food...

    Pizza Expo Virgins right here!

Jwarlow: No sharing of passes is permitted. Why is your local food rep going with you? Does he/she work for a vendor who supplies other pizza places in your area? If so, then his/her company should purchase their pass, as the Expo will only help to boost sales for other restaurants as well...

    Utilties

sricke: When creating our business plan, I contacted our Gas, Water, & Electric companies and asked for average costs of three restaurants of our same square footage. While they can’t divulge which businesses they quoted, they were more than happy to help when I let them know that I would be...

    What would you do?

ARGH! This is our biggest topic of contention. We seat 49, and have a family-style QSR with music and TVs on mute. Couples can enjoy a romantic date, families can dine for a great price, people can watch their favorite sports games… and then we have: The lady that reserves for 20 people, 18...

    Recipe Bank Hoagie Rolls . . . a keeper

eupher61: The best sandwich I’ve ever had in.my.entire.life was the muffaletta from Central Grocery in New Orleans. I wanted to recreate it at my own restaurant, but the food cost was ridiculous. I’d have to charge $18 for a sandwich. PS: also had one of the best meals of my life on The Hill...

Will cheese go lower??? Or is this the bottom?

I’m about to cry. We consistently pay over $3.70 a pound for Grande WM mozz. It’s killing us. Reading your prices makes me weep. I have been in talks with another supplier about switching to Galbani for $2.56 a pound. We’d save between $9K - $11K in one year! It would be the first time we’ve...

    Recipe Bank Hoagie Rolls . . . a keeper

We pay almost $1 a piece for our hoagie rolls. They’re some of the best rolls I’ve ever had, but DANG they’re expensive.

First pictures of our new dining room, need some advice

Looks great! I went to local thrift stores and found solid frames with bad art, then bought prints online and put them in the frames after I’d painted them. It was an inexpensive way to dress up the walls after our budget was blown.

Pizza slices for dine in - What do you serve them on?

We serve our footlong slices on 10" pizza trays with a checkered paper underneath. I used to use paper plates, then started adding the checkered paper, then wised up to how much paper plates cost! It’s easy for cleanup as well.

    Delivery Bag Dilema.

Registered Guest: It’s part of our nightly closing duties. Bar rag, soapy water, scrub them inside and out, then hang them on the dry rack until morning. And the few times I’ve seen stitching pop, I take it to our local embroidery shop and they fix it pronto.

    Disgruntled Former Employee

I had to deal with this as well. Google alerts are SO important for all business owners to utilize. Put your business name in quotation marks and have daily alerts sent to your email address. I also have alerts for “Pizza + mycityhere” so that I can read any posts about pizza in my hometown...

    Delivery Bag Dilema.

Bought our delivery bags three years ago, and they’re still in almost new condition. They weren’t cheap, but then again, neither is our pizza. You get what you pay for. We used www.deliverybags.com and bought the black jackets for 24" pies and 18" pies.

    Yuma cold? I'mma going broke!

For what it’s worth — we’re saving between $10 and $16 a case by purchasing our romaine hearts from our local Albertson’s grocery store instead of through our food distributors. A bit dirtier, and need more attention in prep, but worth it if you’re seeing your bottom line hurt.

    Using facebook?

I don’t ever shop for “likes” – instead, I advertise in the sidebar to our local area (as you mentioned). I spend pennies per new customer who “likes” us and have almost 1500 fans in a town of less than 10K. If I do a FB or Twitter special for the next 10 people who mention the post, we usually...

    Using facebook?

Facebook offered the chance to “upgrade” to the new profile now, saying that they plan on having all business profiles changed automatically by mid-March. I, for one, like it. I have the opportunity to “like” a customer’s post without doing so with my personal profile; instead, I can “like” it...

    Yuma cold? I'mma going broke!

Sysco sent me a pre-printed flyer to post for our customers explaining that we might have to discontinue certain menu items because of the big freeze. If prices go up as they are predicted, our salads alone will be at a 80-90% food cost. Do you stop selling salads or ride the tide until prices...

    Do Crust Savers Work?

We’re going to get a few boxes of Crust Savers (ordering them tomorrow). The final straw was pulling a pizza box off of the top of the oven today and seeing a wet spot on the bottom of the box. No bueno, amigo. The testimonials on their site are pretty compelling.

    Disgruntled Employee

We just had a situation that would have resulted in half of our staff walking out – if we hadn’t intervened and called a quick meeting with all employees involved. We had felt that it was best to keep quiet about why former employees had been let go, and it was just enough fodder for another...
