Been using Progressive Hummer high gluten flour for many years. I always use 58% water and had to back it down to 54%. The company over the past 6 months has changed the bag at least 2 times and I believe that they changed the flour recipe too. All bags come from the same plant in Albany. Anybody else have the same experience or has gone to a different flour?

I don’t know if bad Hummer exist. But I’m sure there is good Hummer if you look around.
No such thing, just some are better than others, unless of course their are braces or jagged piercings involved
