Is anyone using this brand of flour I see they have a high gluten and a special patent available. Just curious how it performs. Thanks
I am using there high gluten flour and it performs very well. It is made by general mills, I think its like 13.5% protein, non bromated.

Bellisimo is GM all trumps I believe. We use for our dough. But I just shop it around since it’s available everywhere
I’ve used that flour. The high gluten gives a great texture to my bread and the special patent is like a secret weapon for certain baked treats. I totally recommend it for everyone. Good Luck
