Can Acunto or Srefano do a 3 minute bake commercially?

Does anyone have experience with one of these great ovens? My question is are they flexible enough to do a consistent 3 minute bake as well as their intended 60 second Neapolitan bake times? Any issues with taming them down if you needed to do a slower bake time? At 3 minutes the floor temp would be 700 degrees. Thanks for the feedback.

I have never seen any of those ovens.
