We are users of the good ole Hobart vcm. We do right about 1000 lbs a day. We have a two guy team do cheese. It takes them 2 hours from beginning to end.

The cheese hog is a great machine and Pete is not a salesman he is the owner and a really great guy! He talked me out of his more expensive unit because my needs were easily met by the manual machine… Time Savings is huge butt the protection of the Integrity of your cheese something not being discussed here? Our is shredded so fast it doesnt have time to age on the table… the hog eats blocks faster than my employees can peel them for shredding… Harbor Freight sells a nice hydrlic cart…I use a piece of rubber bar glass cushion to keep the hog from sliding on the cart… we roll our Hog out of the way when finished…

Give the Palazzolos a call they will give you the Harbor Freight number for the stand. I would also ask them if they ever got around to making their own stand. They were talking about doing so when I bought my machine.

We inter stack a few dough trays under our bus bins… make sure you disassemble the machine before put away your last bin of cheese… the blade components will hold about 18 ounces of waste if you are not careful. I love this machine and the hydraulic cart rolls into the corner store when I am finished…

I can assure you no fingers were injured in the making of this video :slight_smile: . The cheese we used was horrible (very soft and almost squishy) so he was holding onto the block longer to support it a little longer when he hit the button to engage the plunger. We have safety features build in that stop the white plunger roughly 3" before hitting the blade.

We got our Cheese Hog yesterday. Easy to set up (after peeling off all the film, this took me the longest to do), easy to clean, and WOW it really does just blow through the cheese!! We were messing around with different blends yesterday, the Cheese Hog went through 100 pounds of cheese in a matter of minutes!
